Tripe Soup. Half a pound of tripe, three pints )f water, a turnip, a carrot, three unions, sweet herbs, parsley, half a lint of cold milk and two tablespocnfuls of corn flour. First scald the ripe and cut it into very small pieces jefore setting on to boil with the 0 ?old water and herbs. Chop all the S] vegetables into small pieces, add to ^ :ripe and boil slowly for one hour and T i lialfc Then take the corn flour, h work it into a paste with a little cold ti nilk, add to the boiling soup and stir c. iver the Arc ten minutes. Remove saucepan and add lemon peel. . Turn out on a well greased } dish. When cold, flour bauds and roll into oval or pear-shaped balls. Dip in egg, then in cracker crumbs { and fry iu nice lard. PphkiU .Salad. Remove the skin of fresh roasted peanuts, chop, but not too line, and h add an equal quantity of crisp celery cut fine.
