A Jlreakfast Dish.
Chop line nuv kind of cooked lean
raeat, season with salt and pepper, i
Put a layer in a buttered dish, then a
layer of bread crumbs and a few
spoonfuls of gravy, llepeat the same,
leaving bread crumbs on top. Dot
with butter and bake until a nice
brown.
Oiooti l'ie.
Three largo silver-skin onions,
slice very thin. Stew in two tablespoonfuls
of butter; salt to taste;
cover so to steam more than stew; do
not put on a clear tiie as they must
cool; slowly; be sure uor to iex mown
or scoreb; when tender take two
Leaping tablespoonfuls of flour and
stir into tLe onions. Have ready two
well-beaten eg-rs, mixed in a generous
collec cup of mill:; when this begins
to thicken remove from the tire
and bake in an open crust like custard.
To be eaten as a side dish
with meat. Very nice for those that
are fond of onions.
A Cherry Holy-Poly.
Make a light paste, roll in a long 1
sheet, cover thickly with stewed cherries
sprinkled liberally with sngar.
Lloll closely and fold over ;it each
end. Boil or steam, and eat with
. berry sauce made as follohvs: Stir to
a cream a cupful of butter and three
:>f sugar; flavor as yon like; divide
;he quantity, and add to one-haif
enough cherry juice to make a bright
:ed. Shape into a cone. Take a half

Tripe Soup.
Half a pound of tripe, three pints
)f water, a turnip, a carrot, three
unions, sweet herbs, parsley, half a
lint of cold milk and two tablespocnfuls
of corn flour. First scald the
ripe and cut it into very small pieces
jefore setting on to boil with the 0
?old water and herbs. Chop all the S]
vegetables into small pieces, add to ^
:ripe and boil slowly for one hour and T

work it into a paste with a little cold ti

Drain almost dry and pour iu the
milk. Stew in a fariua ketile until
the rice is very tender. Add the ?
sugar, butter and salt, and simmer B
ten minutes. Whisk the eggs to a ti
froth and add cautiously; take the s
saucepan from the tire while you whip
them iu. Return and stir while they t;
thicken, not allowing them to boil.
Remove saucepan and add lemon
peel. . Turn out on a well greased }
dish. When cold, flour bauds and
roll into oval or pear-shaped balls.
Dip in egg, then in cracker crumbs {
and fry iu nice lard.

Remove the skin of fresh roasted
peanuts, chop, but not too line, and h
add an equal quantity of crisp celery
cut fine. Serve 01 tender young let- (1
tuce leaves, with the following dress- t
ing: Two eggs, a half-teaspooLfal of "
salt, a half-teaapoonfal of mustard,
four tablespoonfuls of melted butter
and sis tablcspoonfuls of vinegar.
Beat the yolks of the eggs, add the
salt and mustard and continue to beat; , I
add slowly the butter and vinegar;
cook in a double boiler until the mis- 3
ture thickens; remove from the tire
and add the whites of the eggs r
beaten stiff. When cold arid ready to
serve add one cupful of whipped w
creais. and pour a large spoonful over
