Cook over low heat, stirring constantly, until sugar is dissolved. Cook slowly, stirring constantly, to 230 degrees on c a n d’y thermometer or until mix ture spins a 2-inch thread when dropped from spoon. (This may take as long as 30 or 40 minutes.* Remove from heat; stir in vanilla and cool 5 minutes. Insert wooden skewers in apples at stems and dip until well-cov ered, tilting pan as needed.
