Run u shar knife across it, so as to divide it into tli sized pieces yon wish, and then place i in a warm oven and bake slowly, bein careful not to brown it. Cabbage with Ckeam.?Boil the cal bagos in salt and water until sufficient!; tender, pour off the watSr and eomprea them between two plates. Then choj them up and fry them in a pan with but ter, to which salt, pepper and grated nut meg have been added. Afterward pou some areata overthem, and simmer then in it until ready for use. Pie Crcst.?The most healthy pi crust is made of thin, sweet cream am dour, ?viyi a little salt. Do not kueai thin. Bake in a quick oven. Anothe way is to sift a quart or two of flour ii the pan. Stir in the center a little sal and naif a tcaspoouful of soda well pul verized. Now put in the hole a cup o soft?not liquid lard, or butter and lar< . mixed, stir it thoroughly with the flour next add two scant cups of good sou milk or buttermilk. Stir all quickly wit! the flour, in such a way that you neec hardly touch it with your hands till yoi can roll it out. Bake quick. This wil make three or four pies. ' Lemon Pies. -Yelks of eight eggs . two tablespoonftils of sntmr nn? mn n sweet milk, one and one-half tablespoon fills of melted butter, grated rind of twi lemons, juice of one and one-half lem ons, pastry. Frosting: Whites of elgh eggs,, juice of one-half a lemon, sevei tablespoonfuls of sugar. Pies?Beattb yelks of the eggs light; melt the butter To the yelks add sugar, milk, butter, ant rind and juice of the lemons. Pour th< mixture into two pie-plates, having i crust in each. Bake. Frosting: Bea whites of eggs to a stiff froth. Ad( sugar, and beat it in well. Put in lemoi juice, and stir again. When the pie ii baked, and oold, add frosting and pn plates in oven long enough to mak frosting a good brown color. Portsladb Afi'lk Pudding.?Pari and core half a dozen good apples, ant boil them in as little water as will cool them; reduoe the fruit to a pulp, add tb juice of one lemon and about a quarte: of its grated rind, and half a teaspoonfu of fresh powdered sugar.
