We published in pur local columns yes- terday morning a significant letter from a gentleman known personally or by reputa tion to nealne^eqp penptwiiljbe land. They will be cured iu eight or night days, and they may be kept in tbe pickle lor a year without damage. Cold frames.—Novices are more apt to injure the cabbage, cauliflower, aud lettuce plaubi wintered in these by keeping them too warm than by too much cold. The object of the frames is not only to prevent too severe freez ing, but all growth, and to keep tbe plants iu a perfectly qniet or dormant state. The sashes should not be put on until really freezing weather, and on mild drys must be tilted to allow venti lation. Celery Mayonnaise.—Wash and dry on a towel twelve heads of oelery, and break them up into a salad bowl; then pour over them the following mayon naise : Beat well together the yolks ot two eggs, a piacb each of popper, salt and mustard, the juice of a lemon, and a little water. Strain your soup through a hair sieve, and mash aud press the peas through and return them to the soup; stir well together. Cover thq bottom of your soup tureen with small pieces of buttered toast, aud ponr the soup hot over them and serve. Potato eggs.- Mash five or six well boiled potatoes, add salt, one table spoonful of melted butter, one cup of cream, work well, aud when quite free from lumps add two well beaten eggs aud a cup of fiaely minced ham.
