We published in pur local columns yes-
terday morning a significant letter from a
gentleman known personally or by reputa
tion to nealne^eqp penptwiiljbe land.
We hare received a number of letters pro
testing against the use of our columns for
such “palpable frauds and misrepresenta
tions;" therefore, to confirm bey mi a
ingly he visited Clifton Springs, saw the
author of the letter, and with the follow
ing result:

ing tooth was last night cured by the ap

Pies.—Always bake piesou tin plates,
as they are thinner and bake better on
the iiottum; and they do not have a

be rimmed with strips of paste. For
apple pies cooked fruit is best, and
should be sweetened too sweet for the
taste before the final cooking. Heap
the filling in the oeutre, as it will nat
urally tend towards the edge. No flav-
oriug is lietter than nutmeg, la roll-
mg top paste do not use flour, and roll
but two ways—from you and to one
side. Cut the top paste larger than
the pie plate and draw it into the edge
by raising it in the centre.

A NEW WAV TO SMOKE HAMS.—Smoko
the barrel in which the hams are to be
pickled by inverting it over a kettle
containing a slow lire of hard wood,
lor eight days (keeping water on the
head to pieveut shrinking): in ttiis bar
rel pack tbe hams, aud pour over them,
alter it has oooitMl, a brine made in the
proportion of four gallons of water,
eight pounds of salt aud live pints of
molasses, aud four ounces of saltpetre,
boiled and skimmed in tbe usual man
ner. They will be cured iu eight or
night days, and they may be kept in
tbe pickle lor a year without damage.
Cold frames.—Novices are more apt
to injure the cabbage, cauliflower, aud
lettuce plaubi wintered in these by
keeping them too warm than by too
much cold. The object of the frames
is not only to prevent too severe freez
ing, but all growth, and to keep tbe
plants iu a perfectly qniet or dormant
state. The sashes should not be put
on until really freezing weather, and on
mild drys must be tilted to allow venti
lation.
Celery Mayonnaise.—Wash and dry
on a towel twelve heads of oelery, and
break them up into a salad bowl; then
pour over them the following mayon
naise : Beat well together the yolks ot
two eggs, a piacb each of popper, salt
and mustard, the juice of a lemon, and
a little water. Now pour in, drop by
drop, while stirring, a pint of olive oil,

soup pot, cover these with three quarts
of water and let simmer slowly for
three hours.—Season with pepper and
salt to taste. Strain your soup through
a hair sieve, and mash aud press the
peas through and return them to the
soup; stir well together. Cover thq
bottom of your soup tureen with small
pieces of buttered toast, aud ponr the
soup hot over them and serve.
Potato eggs.- Mash five or six well
boiled potatoes, add salt, one table
spoonful of melted butter, one cup of
cream, work well, aud when quite free
from lumps add two well beaten eggs
aud a cup of fiaely minced ham. Make
the mixture into egg shaped bails, roll
iu flour and fry in good dripping, turn
ing them carefully so as not to spoil
the shape. Pour over a parsley sauce
