Make a verti cal cut on each side of the second joint of the leq where it is at (ached to the body by skin. Bend the entire leq toivard the platter. With the point of the slieer cut throuqh the connect inq skin andsocket and remove the leq. Xext cut off the winq. To slice the breast meat, place the blade at the top of t h e breastbone. Push the knife dow n wa rd a nd fo viva rd toiva rd the winq socket. Continue by movinq the knife a deqreee/oser to the bird. Complete one side of the bird before turninq to re peat the same method.
