ClanSSeriS VE TIMfiY Hie Potato May Replace Bread The slogan “Reach for a potato instead of bread” is a very good ne now for South Carolina folks. The coastal counties are now har- csting one of the largest and best uality crops of potatoes that have been produced for several years. The use of potatoes now will re lease wheat and wheat products '■-'r famine relief. It is very im- Tortant that as much wh^at be rent to the famine area within 1b.e next 60 days as possible. The "bstitution of potatoes for wheat ' roducts will make possible the re duction asked for by the Presi dent. Some people have looked on po tatoes as producer of inflated waist lines. Nutrition experts tell us it is not the potato but the company it habitually keeps— generous helpings of gravy, butter, margarine, and so on. These rather than the potato run up the calories. If a potato weighs five ounces, four ounces of it are water. But the other ounce contains some protein of good quality, staxch, iron, and other beneficial miner als, some B vitamins and vitamin C. From a nutritional point of view, a small serving of potatoes can easily replace a slice of bread, a roll or a biscuit. * A medium size potato provides about 100 calories, so does a thick si of bread, a roll or two small fci "uits. Now that potatoes are pi i. tful. we should use them as mu i as possible to replace bread. They are bulky and perishable can be shipped abroad only in limited quantities. Then potatoes are very versatile food. They can be prepal in many ways and can appear at breakfast, lunch or dinner. Here are only a few suggestions on use of potatoes: Make potato cakes from leftover ma'shed potatoes. In makings stuffings for meat or poultry, use potatoes rather than bread. Top meat pies and other baked dishes with fluffy mashed pota toes instead of pastry. Serve creamed meat, chicken or fish on mashed potato instead of on toast. In place of poached eggs on toast, try eggs baked in nests of mashed potato.
