Austin Shelley, who makes these timely suggestions for July. Animal Husbandry Keep hogs grazing on green forage. Arrange to turn hogs on com when it is in the glazed stage. Reserve some permanent pas ture to be grazed by beef cattle in Tate fall and early winter Feed the workstock three times a day. Change pastures for livestock if possible. Provide shade and fresh water for all classes of livestock. Observe the livestock for screw worm infestation and give treat ment, if necessary. Dairying Mow pastures frequently. Destroy breeding places for flies and use skimmilk-formaldehyde poison (3 gallons of skimmilk, 1 pint of 40 per cent formalin, 1 pound of sugar) In shallow pans to kill flies. Follow directions exactly, for they were developed for peaches and no other fruit: RIPE PEACH JELLY (Makes about G medium glasses) 2*4 cups juice 3*4- cups sugar 1 box powdered fruit pectin To prepare juice, pit and crush thoroughly (do not peel) about 2*4 pounds fully ripe peaches. Add 1 cup water, bring to a boil and sim mer, covered, 10 minutes. (Add a few crushed peach-pit meats to fruit during cooking.) Place fruit in jelly cloth or bag and squeeze out juice. (If there is a slight short age of juice, add small amount of water to pulp in jelly cloth and squeeze agaiu.) Measure sugar into dry dish and set aside until needed. Measure juice into a 3- to 4-quart saucepan. Place over hottest fire. Add pow dered fruit pectin, mix well, and continue stirring until mixture comes to a hard boil. At once pour in sugar, stirring constantly. Con tinue stirring, bring to a full rolling boil and boil hard V2 minute. Remove from fire, skim, pour quickly. Paraffin hot jelly at once. RIPE SOUR CHERRY AND ‘ PEACH JAM 4 cups prepared fruit ! 1 7 cups sugar 1 bottle fruit pectin To prepare fruit, stem and pltt about 1*A pounds fully ripe sour cherries; crush thoroughly or grintL Add *4 cup water, bring to a boiL cover, and simmer 15 minutes. PeeP about 1*4 pounds fully ripe peaches;: pit and grind or chop very fine. Combine fruits. , Measure sugar and prepared fruit, into large kettle, filling up last cup with water if necessary. Mix well. Bring to a full rolling boil over; hottest fire. Stir constantly before and while boiling. Boil hard 2 minutes. Remove from fire and stir !»• bottled fruit pectin. Then stir an<P skim by turns for just 5 minutes to cool slightly, to prevent ficatinp, fruit. Pour' quickly. Paraffin hc.« jam at once. Makes about IX glasser (6 fiaid ounces each).. Country Salad Lettuce, 6 hard cooked eggs, 1 bunch onions, 2 tablespoons grated cheese, 2 tablespoons lemon juice, 4 tablespoons salad oil, 1 teaspoon salt, 1-8 teaspoon pepper, 2 drops tabasco sauce. Line a salad bowl with leaves of lettuce and break enough leaves to make about 2 cups. Cut onion in thin slices, using some of the green as well as the white. Mi: lettuce and onion. Mix lemoi juice, oil, salt and pepper an tabasco sauce and pour over mh ed greens. Add eggs cut in dif and turned into salad bowl, liftir with a wooden fork just enough mix greens and eggs.
