From three quartsof aiftod floor, take onehalf pint of it in a separate vessel, and scald it with boiling water; lot the paste cool to blood heat, and then add one egg, One tea-spoonful of sugar, one table-spoonfat of salt, one cup of new milk, ore cup of Well risen yeast; whip the whole well with a Spoon1, and then pour it into tho ruidrtt of the three quarts of flour; knead it well, with as much warm wator as will make it into a moderately stiff dough ; let your bread rise till at' fekat twice its size ; then after again kneading a groat deal; mould out your loaves or rolls into smooth, regular forms, wet them over with cold wator, to prevent cracking, and set them to rise ngain under a cloan cloth, till by fondling on ono side tlicy will quiver on flic opposite side, then wet again with cold water and bake immediately.
