HOW TO FEED YOUNG HOUSES.
The adult hor??c does not require so
much of the flesh-making principlo as

seems to roquiro a greater variety;

via :?Good floor, yeast, sod aoarnful hand.
From three quartsof aiftod floor, take onehalf
pint of it in a separate vessel, and
scald it with boiling water; lot the paste
cool to blood heat, and then add one egg,
One tea-spoonful of sugar, one table-spoonfat
of salt, one cup of new milk, ore cup
of Well risen yeast; whip the whole well
with a Spoon1, and then pour it into tho
ruidrtt of the three quarts of flour; knead it
well, with as much warm wator as will
make it into a moderately stiff dough ; let
your bread rise till at' fekat twice its size ;
then after again kneading a groat deal;
mould out your loaves or rolls into smooth,
regular forms, wet them over with cold wator,
to prevent cracking, and set them to
rise ngain under a cloan cloth, till by
fondling on ono side tlicy will quiver on
flic opposite side, then wet again with
cold water and bake immediately. If the
fomentation has Dot arrived at this point,
tho bread will not bo sufficiently light?il
it is suffered to go beyond this point, the
bread will lose its sweetness A tin kettle
with a closely fitting cover, is best to set
your bread to rise in, particularly whon it
is set to rise over niirht. to he hnlre,! fur
breakfast iu the morning. Your bread
should ho set to rise in a moderately
warm plane in winter, and a cool
placo in summer. I use yeast cakos, as
more convenient, moro easily kept swoot,
and less" Expensive. I make them thus;?
Boil as many hops as I can grasp in one
hand, in a quart of water, dowu to three
half pints, then pour it over a cupful of
sifted flour, through a sieve or culiondor ;
let it gat cold ; then add of troll risen yeast,
and as much Indian meal as frill mnkoja
stiff dough j set to rise; and when quite
spongy a'ud light, sift your board over with
meal, make your oakes thin, and lay them
en it to dry; turn them frequently while
drying. After they arc thoroughly dry,
bang thom in a clean bag in'the kitchen,
to insure thom from moisture. Do not dry
them in tho iuu, or noara fire ; either will
destroy their life. I usually put my board
of yeast cakes to dry on the highest shelf
iu the kitchen, after sifting them over
with meal, which can be shaken off
with tho dust which will unavoidably f all
