COLLECTION OF GOOD THINGS For ,a tough portion of meat the following recipe will be .found most desirable: Beef en -Caase role.—Put into a c a s s e r ole one- fourth- of a cup ful of sweet fat; when hot add one cupful of the fol lowing mixture: Equal pacta’of celery, carrots, onion and ham all chopped together. Cook the vegetables until brown, then lay them over four pounds of beef. Cover with a second cupful of the same mix ture and eook>_ in a hot oven three- quarters of an hour. Remove Hie meat from the casserole, strain otT the vegetables, add a cupful of sto^-k to j the strained liquid and return to the ! casserole ' with the meat. Over the meat spread one* cupful of raisins, cover and cook for one hour.and a quarter longer. t Roast Veal au Juo.—Season a till?t of \ral with salt and pepper and pur Into a pan with an onion, carrot, bay leaf, clove and small piece of suef. Place in a roaster, put into the oven To hake one-half hour, remove the cover, baste every five minutes for half an hour.
