are easily located and are kept from
injuring other things.
Red pepper tea is a good remedy
for a cold. Prepare it with milk In
stead of water and it will not seem so
fiery.
Sardines dipped in lemon Juice and
crumbs and fried make a pretty hot
dish. Serve them ; in ^ threes, thrust
through a lemon ring.
To clean real hice sprinkle it with
French chalk- and lot it He for sev
eral days under weight. Then shake
It out and it will be quite clean,
A savory toast for a luncheon dish
may he prepared from chicken gravy.
Make nice buttered toast and cover
with the gravy. Serve with a crisp
salad and a cupful of cocoa and one
has a good meal. . ^

COLLECTION OF GOOD THINGS
For ,a tough portion of meat the
following recipe will be .found most
desirable:
Beef en -Caase
role.—Put into a
c a s s e r ole one-
fourth- of a cup
ful of sweet fat;
when hot add one
cupful of the fol
lowing mixture:
Equal pacta’of celery, carrots, onion
and ham all chopped together. Cook
the vegetables until brown, then lay
them over four pounds of beef. Cover
with a second cupful of the same mix
ture and eook>_ in a hot oven three-
quarters of an hour. Remove Hie
meat from the casserole, strain otT the
vegetables, add a cupful of sto^-k to j
the strained liquid and return to the !
casserole ' with the meat. Over the
meat spread one* cupful of raisins,
cover and cook for one hour.and a
quarter longer. t
Roast Veal au Juo.—Season a till?t
of \ral with salt and pepper and pur
Into a pan with an onion, carrot, bay
leaf, clove and small piece of suef.
Place in a roaster, put into the oven
To hake one-half hour, remove the
cover, baste every five minutes for half
an hour. Remove the meat to a plat
ter. put a little water inh) the pan and
let simmer five minutes. Strain and
pour this gnivy around the roast.
Pork Tenderloin.—Split a pork ten
derloin lengthwise, leaving the halves
joined. _J’ound the meat until one-
half in eh thick, then-spread with the
following stuftiqg: .One cupful of
bread cCunihs, one-quarter tenspoonful
of salt, a dash of • pepper, a spray of
(hopped parsley, a tablespoonful of
chopped pickles, capers, n tnWespoon-
ful of chopped olives, a little lemon
Juice. Mix with one-fourth of a cup
ful of butter and one beaten egg. Ar-
