I In substantiation of this state ment aw to safeness the supple ment says elsewhere: "An Interesting sidelight on the duration of canned foods was sup plied somo years ago when Cap tain Ross, of H. M. S. Investiga tor, discovered in Regent's Inlet the stores of the crew H. M. S. Fury." The Fury had been wrecked there in J824. The stores, which had been recovered eight years after the wreck, were brought home and taken to Liverpool. At a lecture arranged by the Royal Society of Arts in 1S68, one of the tins of meat was opened and its contents wero found to be in a i-.tate of perfect preservation." When chotolate Is melted, beat with rotary egg beater until blend ed. Combine sugar, salt. eggs. Add chocolate mixture gradually, stirring vigorously. Add vanilla Place bread In greased baking dish Pour mixture over it. Place dish In pan of hot water. Bako in moderate oven (350 ? F.) 50 to 60 minutes, or until pudding is firm. Serve hot with hard sauce, or cold with cream. Serves 6. Berkshire Pudding 3 squares unsweet- 6 tablespoons ened chocolate, flour cut In piecea V* teaspoon salt 3 cups milk 1 teaspoon \ cup sugar vanilla Add chocolate to milk In double boil er and lieat. When chocolate is melted. 4 beat with rotary egg beater until blend ; ed. Combine sugar, (lour, salt. Add ? small amount of chocolate mixture, | stirring vigorously. Return to double boiler. CooJ< until thickened, stirring constantly. Cook 20 to 25 minutes longer, stirring occasionally. Add va nilla. Chill. Serve with cream. Serves 6. Chocolate Fruit Pudding 3 squares uusweet- Vfe cup seedless ened chocolate, raisins cut in pieces Vj cup dates, 2 cups milk seeded and 1 Vj tablespoons finely cut granulated *4 cup walnut gelatin -meats, broken l/j cup cold water 1 teaspoon i I cup sugar vanilla % teaspoon salt Add chocolate to milk; heat In dou ble boiler. When chocolate is melted, beat with rotary egg ^beater until blended. Soak gelatin in cold water, add sugar and salt; mix well. Add to chocolate mixture; stir' until \ gelatin is thoroughly dissolved. Strain. Chill until slightly thickened, stirring occa sionally. Add fruit, nuts, vanilla. Beat well; turn Into mold. Chill until firm. Uumold. Garnish with sweetened whipped cream. Serves 8. Serve these desserts the next time you have company ? they will win com pliments from your guests. Ever See a Baby Beaver? Here's the Recipe To make a tuna fijh eouffld add two cups of the fish (the contents of jx one-pound can) to two cups of thick white sauce, then add one tablespoon lemon juice and the beaten yolks of six eggs. Fold in six stillly beaten egg whites, and pour into a buttered baking dish. Set in a pan of hot water and bake in a slow oven ? 325' ? for from forty to forty five minutes, or till set.
