Fresh Forty-Four Years
ENGLAND Is beginning to take ?
an Interest In canning. An j
Illustrated supplement of the
London Tlmee featuring the Brit
ish Canning Industry recently !
stated .with true British conserva
tism:
"It 1b something of a reproach
to our economic discernment that,
owing to the national habit of
being too easily contented with
things as 'they are, the bulk of our i
native manufacturers should have I
been generations behind their I
oversea ? competitors (that's us ? i
the U. S.) in adopting the use of i
hermetically pealed metal con- ;
tainers as- a safe and simple 1
means of providing the public, in j
season and out of season, with
never-failing supplies of such j
perishable foods as fruits, vege
tables, flsh and meat." I
In substantiation of this state
ment aw to safeness the supple
ment says elsewhere:
"An Interesting sidelight on the
duration of canned foods was sup
plied somo years ago when Cap
tain Ross, of H. M. S. Investiga
tor, discovered in Regent's Inlet
the stores of the crew H. M. S.
Fury." The Fury had been wrecked
there in J824. The stores, which
had been recovered eight years
after the wreck, were brought
home and taken to Liverpool. At
a lecture arranged by the Royal
Society of Arts in 1S68, one of the
tins of meat was opened and its
contents wero found to be in a
i-.tate of perfect preservation."
This might not seem a modern
iriBtanco to an American editor,
but, in England, anything that
happened as late as 1868 is news!*

Weevils can'tf ruin
AM EARLY CROP
IT is not surprising t'.iat we have one of the
heaviest of all weevil infestations this year.
A remarkably mild winter, a late, damp spring,
the possibility of a wet summer ? this combina
tion of conditions is ideal for the weevil.
What he does to the crop however, depends
pretty much on what he finds when he begins to
get around in large numbers. If he finds sqyares,
it will be just too bad. But if he finds the crop
already set, he'll have plenty to worry about.
The job is to get yov.r crop set just as early
as you can. And there ic nothing like a Chilean
Nitrate side-dressing to do it. Immediate avail
ability, quick action, lasting vigor and vitality ?
these are reasons why Chilean Nitrate is so
valuable, so effective for side-dressing cotton.
Put down 100 pounds per acre (200 pourfds
would be better) right after chopping. That >
ought to pull you through this year. Bat be sure/
you get Chilean Nitrate. See your dealer now.

Fast Fish Souffle
MUCH flsh is sowed for Len
ten fasting, but that's not
? the kind of a fish we mean.
The kind we have in mind is the
kind that can be cooked into a
souffle faster and with less trou
ble than any other kind. Peculiar
kind of fish? Not at all. In fact
it's many kinder and its only pe
culiarity is that it wears a tin
overcoat. It's canned.
When you buy a fresh fish to
make a souflld, you first go to the
store, if you're wise, to pick it
out. Then you take it home.
Then you washMt while waiting
for the water to heat. Then you
cook it. Then you wait for it to
cool. Then you remove the skin
and bones. Then you flake it.
Eight separate steps.
When you use canned fish for
this purpose, you first phone the
grocery store for your favorite
brand. or take a can of salmon or
tuna down from your shelf, open
the can, and Hake the fish right
into the white sauce. Three steps.
Here's the Recipe
To make a tuna fijh eouffld add
two cups of the fish (the contents
of jx one-pound can) to two cups
of thick white sauce, then add
one tablespoon lemon juice and
the beaten yolks of six eggs.
Fold in six stillly beaten egg
whites, and pour into a buttered
baking dish. Set in a pan of hot
water and bake in a slow oven
? 325' ? for from forty to forty
five minutes, or till set. Serv.
at once. This recipe serves eight.*
