Phosphate types give off part of its gas when mixed with liquid, part when heated. Tartrate type reacts al most entirely when combined with liquid. The gas formed expands when batter or dough is heated. Most recipes are based on double-acting baking powder unless specified otherwise. If you use a single acting bak ing powder use l 1 ^ times what the recipe called for. Baking soda gives off gas when you mix it with a food acid such as buttermilk, soup milk, molasses, vinegar or lemon juice. With too little leavening, your product may have a peak, tough crust and a tight grain or texture. With too much leavening the prod uct may fall, have a gummy crust, coarse grain, or a dry crUmbly texture. Be sure to measure accurately in order to produce a good baked product. USC Alumni Campaign Opens The Laurens County Uni versity of South Carolina Alumni Association is'con- conducting its annual alumni fund drive. R. Bland Roper of Laurens is county campaign chair man. Co-chairmen are Rufus E. Sadler and Lydie Leake Hamer, both of Clinton, and Bobbie Dial McAlister and Martin A. Boyce, both of Laurens. There are over 125 Game cock alumni in Laurens Coun ty. The USC Educational Foun dation raises funds for aca demic advancement in areas where other revenues can not* be used or are inade quate.
