Spend ing the week with them also were Mr. and Mrs. Tom Workman of Dinuba, Calif. Mr. and Mrs. George Smith Jr. of Spartanburg joined them for the week-end. This past week-end, Mac Smith, Stevie and Dean Rowe were in Columbia returning the visit. They attended the Christmas parade on Friday while there. Turkey Pan Pie For Hearty Eaters Kice Council Photo Turkey Pan Pie is * dish far hearty appetites, a full- flavored turkey and rice main dish that needs little in the way of accompaniments to make a moat handsome main course. There is a nice balance of good-for-the-family things in the casserole mixture. Apple makes for the unexpected touch of color and flavor that’s atwaya welcome. Celery adds crunchy succulence. Turkey furnishes prime quality protein for good nutrition as well as the'dominant flavor. Rice, the invaluable grain, supplies body, unites flavors and extends the other in gredients in the most eye-catching, money-saving way. Cooked rice is called for, and whatever kind of rice is used is entirely up to the family’s or the cook’s preference. There are four basic types to call on: precooked, parboiled, regular milled white or brown. And each will give A-OK results in terms of tenderness, light fluflincss, good taste and good nutrition when cooked following directions bn the package. A sweet relish, such as watermelon pickles and preserved kumquats, points up the savory good taste of Turkey Pan Pie. Turkey Pan Pie cups cooked rice teaspoon marjoram teaspoon salt teaspoon pepper cans (10y 2 ozs. ea.) cream of chicken soup cups grated sharp cheese 1 cup chopped onioa 2 1 cup diced celery 1 2 medium apples, cored and • 1 diced Vi 3 tablespoons butter or 2 margarine 3 cups diced and cooked turkey 2 (in large pieces) - Cook onion, celery and apples in butter until tender. Add turkey, rice and seasonings. Stir in soup. Mix thoroughly. Turn into a greased 2-ouart casserole. Cover and bake at 350 degrees for 20 minutes. Remove cover. Sprinkle with grated cheese. (Continue baking another 10 minutes. Let me give you some recipes which you might like to try in using your leftover turkey. TURKEY KIDNEY BEAN SALAD While turkey and dry beans are plentiful and especially thrifty try this main dish salad. Use chilled ingredi ents, mix quickly and it’s ready to serve after chilling, about one hour to blend flavors. Serve with carrot sticks, to mato wedges and potato chips, Have tapioca pudding for dessert. This makes a bal anced meal which is easy to prepare. 1 cup cooked, coarsely chopped turkey ‘ 1 tablespoon finely chopped onion 1/3 cup chopped, sweet pickle 1 teaspoon salt 1 teaspoon prepared mustard 1^4 cups cooked or canned drained kidney beans 2 hard cooked, diced eggs 2/3 cup coarsely chopped celery 3 tablespoons mayonnaise 1 teaspoon pickle liquid Combine all ingredients. Toss lightly. Chill at least 1 hour to blend flavors. Makes 6 servings, Vs cup each. TURKEY FRUIT SALAD Here’s a good way to use cooked turkey. Frozen tur key drumsticks cooked until tender, boned and chilled are good in salads. 3 cups cooked, diced tur key 2 cups drained pineapple chunks V4 cup fruit salad dressing (recipe below) Paprika as needed 1 cup seedless, halved grapes 1 cup apple wedges, nun- peeled 6 lettuce cups 1/3 cup almonds, slivered toasted if desired . Combine turkey, grapes, pineapple chunks and apple wedges. Chill until just before serving time. Blend lightly ( with . salad dressing. Dipl well. Cook over hot, not boil ing, water, tirring constantly until mixture is thick and clear. Chill. Yield: 1V4 cup dressing. HOT TURKEY SALAD 3 cups cooked diced turkey Vz cup toasted almonds 2 teaspooqs grated onion 1 cup crushed potato chips 2 cups diced celery Vi teaspoons salt 2 tablespoons lemon juice 1 cup mayonnaise Vt cup grated cheese Combine all ingredients except potato chips and cheese. Mix lightly. Place in greased casserole and sprinkle with potato chips and cheese. Bake at 450 degrees F for 15 minutes. Makes 6 servings. SCALLOPED TURKEY SUPREME 1 cup turkey broth 3 cups creamy turkey gravy Vi cup slivered almond* 1 cup sliced mushrooms sauted in butter ) 2 cups cooked rice 3 cups cooked, sliced turkey (about) 2 tablespoons minced pi- miento v Buttered bread crumbs Pour broth over cooked rice. Place a layer of rice in buttered casserole, add lay er of turkey and layer of creamy turkey gravy. Sprinkle with almonds, Pimiento and mushrooms. Add alternate layers and top with butter ed crumbs. Bake at 350 de grees F. for 45 minutes. Serves 8. Clemson Releases Lawn, Golf Grass CLEMSON — A fine-stem stemmed bermudagrass suit able for fine lawns and golf greens—known as Pec Dee 102 —is being released by the Clemson University Agricul tural Experiment Station. The grass is a mutation arising from an early S. C. planting of Tifton 328 varie ty. The selection was made from a patch growing on a Florence, S. C., golf course. The new grass offers a darker green color, faster coverage, and added disease resistance. It has fewer seed heads following stress cond - tons. and has less upright growth than the parent. Pee Dee 102 is completely male sterile and does not produce viable seed However, the grass is easily increased by sprigs.
