FARM, GARDEN AND HOUSEHOLD. A Rhode Island Poultry Farm. A correspondent of the Boston Transcript gives an account of a visit to the farm of Mr. I. O. Wilbour, in Little Oompton, R. L A portion of the form is devoted to poultry. The object at this time of the year is the production of eggs, and we visited more than a dozen buildings devoted to the use of fowls and this branch of production. The limits of this article will not allow of a detailed description of the building or of tho different varieties of fowls or their management, but we understand that there were now on thp premises about eleven hundred hens, and that it was no unusual thincr to send two linn dred dozen of eggs per week to market. O ur ideas of the labor of hunting hens'eggs were greatly modified when we saw the man in charge walk along in front of the long rows of nests and pick up about four hundred fine, large, clean eggs. The eggs are all carefully gathered at night and sent weekly to the Boston market, so that there is no chance for them to be otherwise than fresh and good; indeed, we were told that every egg is warranted to be perfectly fresh and sweet. The labor of providing the required variety of food for so large a family is no small item. Wheat shorts, beef scraps, and meal are bought by the ton, and corn by the car-load, while occasionally other varieties of grain are used, with broken oyster shells in abundance. Cleanliness and a variety and liberal supply of food, we should judge, were the strong points of the management here. We observed that disinfectants were freely used, and were told that deaths by disease were of rare occurrence. A regular system of debit aud credit is followed in this business, but in the absence of the proprietor we had no means of getting the figures. From our standpoint, it seemed not only pleasant but highly profitable. Rhubarb Pee.?Take off the thin skin, cut the Btalks in small pieoes, add a little flour, place it between two covers. When the paste is done removed the top crust and add sugar and butter, mixing them thoroughly with the rhubarb. Put the top crust on again and serve warm. Other seasoning may be added if desired. Rhubarb pies mode in this way do not run over and waste their sweetness in the oven. Mock Apple Pie.?Two soda crackers, one egg, one cup of sugar and one of water, the jnice and yellow rind grated of a lemon. Bake with upper and under crust. Omelet Souffle.?From five eggs remove the whites of three_and put in a separate dish. Beat the five yolks and two remaining whites together, add half a cup of milk, and pour into a fryingpan with batter in it just hot enough not to burn. Wher^this is nearly cooked, spread over the top the three whites beaten to a stiff froth, and set in a hot oven two or three minutes. Fold over, trim - x * * wtuu uu t? Jjiobvoi j UUU CHJI VU ilOC. A QG_ licioua dish. SobaubiiBd Egos.?Into a frying-pan pour a cop of cream; -when this is hot, poor in a dozen eggs, previously broken, into a dish. Cook slowly, stirring constantly so that the eggs will be evenly done, and serve immediately. Study to Save Mtepe. If farmers would get in the habit of spending half an hour each day in thinking how 6teps may be saved, work would turn to more account. Some barns ore so unhandy that thousands of steps ore taken every year that might be saved. In the house, and especially in the kitchen, is this the case. Many a farmer Bpent hours and hours last winter by the fire, kept in by the cold, when he would have been much better engaged in digK" ig a well under the kitohen, so as to ve a pump bring water into the sink. Such an improvement will save miles of travel every year, and whenever water is drawn therefrom blessings will be pronounced. Some pantries are so inconvenient, and so deficient in drawers and shelves, that time is lost in hunting for things, and temper is soured. Pray ?stop, consider, devise, execute ; and if it does not suit, try again?and do have things convenient, and save steps. Preventive Against Hatha. A very pleasant perfume, and also pre vcuuvb against mows may be made of the following ingredients: Take of cloves, caraway seed, nutmeg, mace, cinnamon, and tonquin beans, of each one ounce, then add as much florentino orrisroot as will equal the other ingredients put together. Grind the whole well to powder and pnt in little bags among your clothes, ete. This will answer for furs also; but I never tried ' anything more certain as a protection against motfis in furs than to first shake out or beat out every foreign substance before putting away for the season. Then wrap them up in a perfectly sound newspaper. What I mean by sound is, that there shall be no holes or breaks in the paper. Make a bag oi the paper bv pasting; pack in and paste up the mouth of the bag. Put in a drawer where it will not be disturbed. If well done not a moth will ever be found inside. A PM DcMrayer. It appears that the white grub worm, a great destroyer of oora, potatoes, and other vegetable products, has been attacked by an enemy which threatens its extermination.
