Grate and drain thoroughly. Add egg yolks, salt baking powder and flour. Beat well. Fold in stiffly beaten egg whites. Drop by spoonfuls on to a well-greased skillet which has been heated. Brown on both- sides. Serve with applesauce. RECIPE OF THE WEEK Crisp Oatmeal Cookies (Makes 60) 1 cup shortening 1 cup brown sugar 1 cup granulated sugar 2 eggs, beaten 1 teaspoon vanilla 2 cups flour 1 teaspoon soda 1 teaspoon salt 3 cups quick-cooking oats *2 cup chopped nuts Cream together sugars and shor tening; add eggs and vanilla. Add sifted dry ingredients, then oats and nuts. Shape into rolls and wrap in waxed paper. Chill thoroughly, then slice one-fourth inch thick and bake on an ungreased cookie sheet in a moderate (350 degrees F.) oven for 10 minutes.
