EDITOR oF THE RURAL GARO LIAN: I have just read an article in your valuable monthly headed "Taters Don't Pay, or Cyphering on the Farm," which has induced me to give your readers an account of an experiment made by me on one acre of potatoes last year. The figures are as follows: Dr.. Now if any of your readers think that potatoes don't pay it is because they don't try to make them pay.-H, P. G., In the Rural Carolinian. HOW TO RArsE GonoO CHEAP LY.-Last year I tried one acre of light red land, originally rieb. which had been in oats the- previous year. A heavy coat of grass was turned under in February, with a two-horse plough. It lay thus till the first of May, when it was bed ded and planted in the usual way, selected seed being used. It never lacked working when neded, but suffered from drought in August. At the last working, in June, two shallow furrows were run, six inches from the cotton, and one bag of Stono Phosphate to the acre put in them. I sum up as follows: In. Take half a !.ashel of un slacked lime. sinek it with b'oiling water,eo~vermug it durir~ g the process to keep in~ the steam ; strain the liquid through a fine sie ve or strain er, and ai to it a peek of salt pre vious!v well di-Ssolved in water.; three po4ud5 ground riee boiled to a thin paste, and stirredm inl bo11 ing hot ; half pound of Spanish whiting, and a pound of elean glue which has been previously dissolv d by soakingr it tirst, and then hanging over a slow fire in a sall kettle inside a large one filled with water ; add five gallon~s of hot wa te:r to the mi!xture, stir~ it well, and let it stand a few days covered1 frm the dirt. A pint of this mi:xture will cover a gard square of the outs de of a house, it appdi.ed with a large paint-brush. POTnTO SA.A.-Cut a dozen. cold boiled p)otatoes in thinl slices and mix thzemi thoroughly with a little onion chopped very fmne, a teaspoonlful of salad (il or melted butter, achopped apple, a bit of parsley and half a gill of vinegar. Otherwiso it mav be eit across in round slices wth a Ahar. knife. -.wo JELLY CAK:.-Pour thrce eups of boiling w:ter on ci eip of sao; let it stand two minutes ; add three cups of finely chopped tart ap ples. the juice of one !arge lemon. one cup of stoued raisins, and oue gill of sugar. Mix thoroughly and dip one inch thick in deep patty pans, or bis cuit pans. Bake in a moderate oven one hour or less, but do not brown. Let thew stand till very cold, then put on plates and serve for supper. This can alsu be baked in a puddii-g dish and taken out in slices when cold. PFAR L BAU:Y PU DuING.-Boil or steam One pint of pearl barley in two Ir quarts of water. Cover Close and cook four or tive hvurs. or until very soit. T to thr.:e irts of this barley, add ei m one quart of chopped apple and one I nit of stewed raisins, or raisins and currants the juice of three lemons and W one-liaf pout of su_-,r. Mix evenly and bake in an earth:n nuddi g dish one and a half h.mts. Serve warm or cold. R This will anpiv serve two persons. 3AIZ: PUDDIN G.-To two cups of cold boiled houiny, acd three cups chopped apple, the juice of two sulall lemons. one-third of a cup of sugar and two-thirds of a cup of Zante cur- s rants. Mix very thoroughly, being tc sure not to have any lumps of cold houiny. Bake one hour or more in a moderate oven, or until of a light brown. Serve cold. Good for lunches. [Se;ence of Health. f( PJCKED ('ABBAGE.-Take five heads of red cabbage-heads rather a below medium size-tear off all the loose caves and crop the rest fine.- A Add aho a peek of peppers chopped fine. after cutting open and clearing of seeds and stems; about a peck of large, smooth,. gres tomatoes. slieed about g half an inch thick; one-fourth pound c, each ot ground cloves and cinnamon; ti half a pint of whole mustard seed, and a I stuall teaeupjfui of salt. The cabbage. peppers, salt and spices wix intimate ly and then put in jars or a tub-first a thin layer of cabbage, etc., and then one of tomatoes, and thus alternately, top ping off with thc cabbage and peppers. Over the whole pour boiling hot eider vlegarsuliif:ienlt to thoroughZliy saturate the same and let it stand een with theL top of the p;ickle. (Cover tigh t and leave to stand till cool, then set aiway. It is fit to eat in two days. OYrTER Sot r.-Take three quarts of oysters, and strain the liquor from them. Put the liquor on to boil with half a pint of chopped celery, one onion, two or three e blades of mace, pepper and salt. a When it boils, add the oysters. Just before taking it off, the thick enin g must be added, viz., onej spoonful of flour creamed into the well-beaten yolks of three eggs. Pour a little of the hot soup grad ually upon the eggs and flour, stir ring all the while, and as soon as : well mixed, with a little cream, c pour into the soup. Then add d one qjuart of rich unskimmed milk;e let :all come to a boil and pour in to a tureen over sonic small squares of cold bread. Serve it very hot. To 31AKE hAIR U R L.-The method employed by professional worker. in hair is as follows: e the- hair to be cur-led, wrap it smoothly around a cvlindrical stiek n< r troe ot proper size, tje it in p pace, then put it in water and boil it two or three hours, remove it from the boiler, wrap it carefully _ in a newspaper and bake it in a moerate oven for an hour. Apply it with a brush I to the fract ured edges of the china ware and stick them together. In B: or a few days it will be impossible to break the article in the saime place.
