CHRISTMAS DESSERTS. Cold desserts may be made the day before, an advantage when one/ has but little help to prepare the meal. Chocolate Rus&s. -Soak a table spoonful and a half of gelatin In three tablespoonfuls of cold water, dissolve it in a cupful of scalded milk. Put a tablespoonful of grated chocolate, two tablespoonfuls of sugar, a tablespoonful of boiling wa ter into a cup and stand this in a pan of hot water until the chocolate is melted, then add the mixture to the milk and gelatin. Whip a pint of cream I until stiff, add to the first mixture, blending all together well. Line a mold with sponge cake or lady fingers and just before the cream mixture sets pour into the mold. Set in a cold place until serving time, then turn on to a fancy platter and decorate with whipped cream and candied cherries. Dip the mold in hot water and run a thin-bladed knife between the mold and the lady fingers before unmolding. Fruit Nut Cream.-Whip a cupful and a half of cream, add two table spoonfuls of sugar, a half cupful of chopped nuts, two tablespoonfuls of minced candied orange or grapefruit peel or other candied fruits. Serve in sherbet cups lined with lady fingers. Mince Meat.-Take a pound each of raisins, suet, currants, half a pound of orange peel and citron, one pound of sugar, two pounds of apples, 1% teaspoonfuls of mixed spices, a table spoonful of salt, juice and grated rind of two lemons, a cup of nut meats and a cup of cider. Chop the suet fine and mix all the ingredients together. The nuts and apple should be chopped also. Cover and set aside to ripen. Cabbage sliced and seasoned with salt, pepper and vinegar is a good accompaniment for oysters. Thud- 7jt+**~ac. Lemons are one of the most useful of fruits in our domestic economy. Lemonade is an exceed ingly wholesome drink. A half a lemon squeezed into a glass of water and taken before breakfast is a fine tonic. The ref use left may be used to remove stains from the hands. Lemon juice and sugar made very thick is a great relief for a cough. A baked lemon is excellent for hoarseness and one often used by singers and public speakers. Bake the lemon like an apple, then squeeze out the juice and add sugar to it Hot lemonade will break up a cold If taken at the start. Lemon juice, glycerin and water nakes a most healing lotion for chapped hands. f The dark streaks on the neck may be removed by rubbing lemon over the neck night and morning. Lemons rid the system of humors and bile and leave no evil effects. Weak, debilitated people sometimes may be greatly benefited by free use of them. Lemon juice should be di luted with water or sweetened suffi ciently to lessen the burning sensa tion in the throat. A most nourishing drink for an in valid is a fresh egg well beaten, added to a glass of strong lemonade. The pulp of a lemon rubbed on the roots of the hair will help to stop the ordinary cases of falling hair. Sore and tender feet may be re lieved and often cured by the free use of slices of lemon applied to the feet at night. Salt sprinkled over the lemon will cure chilblains; repeat for several nights. For feverishness, roll a lemon until soft, cut off the end and put into it as much sugar as it will hold, then suck it slowly. Lemon jelly is a good dessert, or combined with other fruits makes a most delicious fruit salad. Gelatin used in combination with lemon juice ls a good way to introduce variety in to the diot of a convalescent. Charts for Commercial Geography. Commercial geography as It is now widely taught ia the public schools by listing the various imports and ex ports of countries and the products of different cities fails to give a clear Idea of the relative importance of the materials listed. It frequently hap pens that the second or third item on a list may have only one tenth the importance of the first Item. Because the three names are given one afte? the other, the pupil is quite likely to consider the three items of equal im portance, just as three persons may be of different height, yet of about the same importance. The graphic meth od judiciously applied to school geog raphy and to genera? commercial geog raphy would make a tremendous dif ference in the student's grasp of the subject.-Engineering Magazine. The evening meal is digested during the night. The midday meal, especially when it is heavy, causes drowsiness in some persons. The proof that digestion is active in the night is the fact that waste is gen erally accumulated in the morning. Furthermore, in the case of persons who have died during the night, the autopsy shows that digestion is fur ther advanced the longer the period intervening between the last meal and death; from this fact the probable time of death has been indicated at coroner's inquests. False Alarm. The sexton was showing a holiday party around the church, says the Man chester Guardian, when someone asked him if he feared a suffragette attack. And she did." Snake Farms In Tropics. Two snake-infested countries, India and Brazil, maintain "snake farms" at whioh a scientific study of serpents is being pursued. The venom from the poisonous ones is extracted and made into a serum for curing persone who have been bitten. The Brazilian insti tution, near Sao Paulo, is maintained at an expense of $40,000 a year. Be sides preparing serums the "snake farm" tries to spread knowledge about snakes and induce fanners not to kill them indiscriminately.-The Outlook. Danger in Overripe Clover. Although crimson clover ie an ex cellent forage plant and is eagerly eaten by many animals, it is nearly always fatal to horses and mules when eaten in the full ripe stage. The rea son for this is that as the clover reaches maturity, the little hairs with which it is covered become hard and indigestible.
