Sept. 12.?The liberty motor, the airplane engine, upon which the United States is relying to establish definite air supremacy over the Germans over tho battlefields of France, has passed its final test ami hi a complete and gratifying success. Secretary Baker announced today. Secretary Maker's statement in pari follows: "The United States aviation engine has passed its final tests. They were successful and gratifying. Tho new motor, designated by the signal serv Ice as the 'Liberty motor,' Is the main reliance of the United States in tin rapid production In large numbers* of high powered battle planes for servic in the war. In power, speed, serv Ice-ability, and minimum weight the now engine invites comparison with the best that the European war hftJ produced. "I regard the invention and rapid development of this engine as one of the really big accomplishments of the United States since its entry into tlu war. The engine was brought about through the cooperation of moro than a score of engineers, who pooled their skill and trade secrets in the war emergency, working with the encour? agement of the Aircraft Production Board, the War Department and tin Bureau of Standards. "The story of the production of tills engine is a remarkable one. Probably the war has produced no greater sin? gle achievement. One of the first problems which confronted the War Department and Aircraft Production Board after the declaration of hostilities was to pro? duce quickly a dependable avlatlor motor. Two courses were open. One was tc encourage manufacturers to deveior their own types; the other to brim the host of all types together and de? velop a standard. "The necessity for speed and quan tlty production resulted In a cholc< of the latter course and a standan motor became our engineering objec? tive. "A remarkable engine was actually produced three weeks before any model could havo been brought from Europe. It was promised that, this engino would be developed before the fourth of July. When the parts were assembled the adjustment was perfect and the performance of the engino was wonderfully gratifying. Not only did this country furnish Ideas through cele? brated engineers, but tho represents* tl\??s In the United States of England, France and Italy cooperated in the development of this motor. "Thirty days uftc? the assembling of the first engine preliminary tests justified the government in formally accepting the engine as the best air? craft engine produced in any country. The final tests confirmed our faith in the new motor in every degree. "Both the flying and altitude tests of the new motor have been gratify? ing. One of the engines, in an air? plane, broke the American altitude record In a recent Hying test. "While it is not deemed expedient to discuss in detail the performance and mechanics of the new motor, it may be said that standardization is | chief factor in the development of the government's motor. "The new engine amounts practi? cally to an international model. It embodies the best there is in Ameri? can engineering and the best features of European models. "The two engineers most directly connected with the production of the United States aviation engine had be? fore them not only the blue prints and models of the most successful en? gines the war has produced, but also every available American suggestion, i The result was a composite design of maximum power, minimum .weight, great speed capability and adaptabil? ity to quick production. "The standardization of parts mate? rially simplifies the problem of repair and maintenance. Spare parts will be promptly available at all times. CONSERVE THE GRAPES. Approved Methods of Utilizing tin Surplus Crop of Scuppernongs. Vnfcrmcntcfl Grape Juices. The following directions for mak? ing unfermented Muscadine grape juice are based upon the experiments of the United States Department of Agriculture in 191G: Cold-Dress Method. Secure sound, clean, fully ripe fruit; crush the fruit by hand or, better, with a homemade crusher. If a elder mill is available, it is well adapted for both crushing and pressing. Alter the U?rrles are crushed the juice should be pressed from the fruit immediately. Small quantities of fruit can be press? ed in a clean cloth sack by hand, but if as much as a bushel of grapes is being handled a cider mill or an in? expensive homemade press should be used. Having secured the fresh grape juice, strain it through flannel and then place It in bottles or fruit jars. While bottles are suitable if preferred, the quart clamptop or lightning-seal type of fruit jar is* recommended as the best container for grape juice for home use. Such jars ordinarily are moro conveniently and successfully used, are moro generally available, and can be used also as containers for other products in succeeding years. Having placed the juice in bottles or Jars, put these in a water bath and sterilize by heating until the juice has reached a temperature near but not quits up to the boiling point. D 0 thermometer is available, the tempera? ture nan be tested. As soon as the juice has reached a temperature of 190 to 195 degrees F. remove it from the sterilizer. If no thermometer is available, remove the juice as soon as It shows the first sign of .simmering preliminary to boiling. A good home water bath or sterilizer can be pro? vided by placing a false bottom of wire gauge (4 meshes to the square Ineh) or a thin board in which nu? merous hobs have been bored In the bottom of a washbollor or large, cov? ered preserving pot Piled with water enough to surround but not coyer the bottles or jars of grape juice. The false bottom enables water to get un? der the juice containers and the cover Of the water bath confines the steam, which sterilizes the upper parts of the containers. Just as soon as the tem? perature of the juice has reached the point at which sterilization has been assured, remove the bottles containing the juice from the water bath, seal at on te, and store In a dark, cool place until desired for us. in sealing the fruit jars, before clamping them, dip the rubbers for a moment in the hot water of the water bath, so that they also will be sterilized. If bottles are used cork them with new corks that have just been soaked for about 30 minutes in water at a temperature of I not less* than 140 degres P. Use a cork a little wider than the mouth of i the bottle, and after Inserting this as far us possible cut off the rest of the cork even with the mouth. Dry the mouth of the bottle thoroughly and dip in a melted mixture of equal parts of beesWAJC and rosin or in melted paralllp. Hot-Press Method. The hot-press method is identical with the cold-press method, except that the crushed fruit is heated nearly but not quite to the boiling point and is then pressed while hot. In homo work the fruit generally is heated in a large dish pan. Stir it while heat? ing, so as to bring the entire mass Simultaneously to the desired temper? ature. Then place it in a cheesecloth bag, hung over a receptacle to catch the juice, and press by band. Allow the juice to cool, strain it, and then proceed as in the cold-press method. Canned Grapes. Canning is a very economical way of utilizing Muscadine grapes, since little sugar is required for this pro? cess. The canned grapes are suitable for serving on the home tablo in sauce dishes as a breakfast appetiz? er, a side dish, or a dessert. They can be used also in pies, pudding, cakes, etc. In the investigations of tho Depart? ment of Agriculture the Musoadino grapes were canned successfully by three methods, designated as the coeking method, the sugur syrup method, and the grapo syrup method. The first is the easiest and most practicable, while the two others have the advantage of yielding more at? tractive products, because the berries do not lose their shape. Whatever the method, the essential features are (1) getting rid of the seeds, (2) soft? ening the skins, (.1) sweetening with a small addition of sugur, and (4) careful sterilization and sealing in fruit jars. Cooking Method. In canning grapes by the cooking method, which is the one generally recommended for home use, use firm but fully ripe fruit. After weighing the berries-, separate the skins and pulps after running the fruit through a crusher. If preferred, the berries may be pulped by hand. Then place the hulls in a closed vessel, adding I one-half pint of water for each pounds of fresh fruit. Cook until the hulls are quite tender. When this point is reached, the added water will have mostly evaporated unless tin vessel has been very tightly closed. Whilo softening *he hulls, heat the pulps and juice in another vessel un? til the pulps break down enough to liberate the seeds. Then put the pulp through a colander to get rid of the seeds. Put tho seedless pulps and soft? ened hulls together when cool and add sugar and water at the rate of 1 pound of sugar and one-quarter pint ol water to each ?> pounds of fresh fruit. Then bring the mixture slowly to a boil, and after boiling for S to 10 minutes* pack and seal it while hot in hot sterilized fruit jars. Sugar Syrup Method. In canning the whole berries by the sugar syrup method use firm, ripe fruit. Slit all the berries on tho Side horizontally with a small hladed knife and then brush tho seeds from then with the point of the knife. Pack the seeded whole berries, cold, in pint jars and pour over the fruit until the jars are tilled a sugar syrup made by boiling equal measures of sugar and water together for 1 minute. After al? lowing to stand for half an hour to permit the syrup to seep through tho slit in the berries, refill the jars with syrup, and put-the rubbers and caps in place with the jar clamp in a raised position. Then steam the jars in a home steamer until the skins have softened and the fruit and jars are sterilized. While the jars aro still hot refill with boiling sugar syrup and then seal by clamping down the lid. The proper length of time to steam the fruit and jars varies with tho variety. The Scuppernong re? quires approximately an hour; the James should steam an hour and a half; and the Thomas will require fully two hours. The aim should be to steam the fruit long enough to soften the skins without having the berries break down. Unless* the seed are removed so that the sugar syrup gets Inside as well as outside, tho ber? ries shrivel up when canned by this process. Crape Syrup Method. Tho grape syrup method is identical j with' the sugar syrup method, except that a concentrated grape Jutes, mado by boiling the unferrnentcd fresh juice down to two-thirds its original volume, is used. The quality of the finished product obtained by this method is hardly equal to the product canned in sugar syrup, but the meth? od avoids the necessity of using su? gar and therefore is economical. Cotton continued to ppsjpj rapidly and picking was being pushed vigorously in all sections except tho extreme northern counties. Lack of sufficient rainfall caused material de? terioration, wilh much complaint of rust and shedding, especially in tho eastern and north central counties, where estimated damage amounts to approximately twenty per Cent, of tho anticipated crop. Corn is practically all matured, with little or no damage from drought. The crop generally is reported to be the best in many, years. Planting of fall crops has be? gun, and fall Irish potatoes are up in Southern counties. Sweet potato digging continues, with good yields* Fruit is becoming very scarce. Joseph F.
