HB FRESH AFTER 9 MONTHS ?ODIUM SI MC ATI-: SOLUTION WILtL l'HHSFK\ 1 IBM Money In Farmer's l?ockot?F.gg> Itetivctl lo Spring When Plenti? ful Brio* High VMM m Winter. Clemaon College June 10.?One of the ways in which the countryman can reduce tho cost of living is by ?vanning" eggs at this season of the year. Eggs uro plentiful in South Carolina no* und cun bo sold only at prices which urv low in comparison with those of winter. Fur this reason the farmer usunl'y hus more on hand than ho can dispose of readily. How eggs can be kept fresh for months la described by F. C. Hare. State poultry demonstration agent in co? operation with Clemson College. One of tho boat und simplest meth? ods of preserv wui or "canning" eggs Is to place Hum In a solution of "water glass." or sodium silicate. This Is * transparent liquid that looks like thin, strained honey and Is used commercially in manufacturing mucil? age. It can be jo . tired from a drug* glat. This li<|Uh! covers the shell op an egg with an in.pervious coating of glue and prevents bat i? i la-laden air from pent touting Inside the shell and reedcrlng tho cug unfit for fond. Secure a suitable glazed earthen? ware crock with cover a live gallon suiter crex k .* a good slsc?Ihe u! ?/. Ing being to prevent the solution from being Absorbed. Seen re miu quart of more of sodium gttasati uf water glass. Thoroughly rinse the inside of the crock und the ciatr with boil? ing water to kill any germ Ufa that may bo 'here. I toll three or four gallons of water and allow to cool When < obi. make a mixture of nine pHrta of this water aid one part of the sodium silicate Fill tno crock two.thirds full with the preserving mixture. As the eggs are gathered dail\, put IheSJl into the crock. Da not keep eggs for several days before putting Into the solution, an it Is very Important that tlx < go> In the day tins arc laid. 'Ihe egg? must on im arc.ami be Washed bei ore being staoed m the etat and cracked eggs or those with thin shell.*, that might be broken mint he dis? carded. Fggs may be put In Ihe i foci ut III It Is three-fourths full. b. a ring 111 inlml, however, thut at least one inch of the liquid must he above the lop layer of eggs. Place the cover on the crock and set In a moderately cool place to prevent excessive evapora? tion of the liquid. Eggs should be examined from time to time and more boiled water added if necessary to keep the solution an inch above the top layer of eggs. For general culinary purposes wa? ter-glass eggs arc equal to ordinary fresh eggs. They may be poached, fried, scrambled or used in making cakes or biscuits, loot as thev come from the crock. However, if it is desired to boll then:, stick a pin in the large end of the shell and make a small hole 10 allow the gas to escape when the egg is heated. The water glass solution closes the pores of tho egg shell and acts like a tin ran around tomatoes. If an opening is not made the shell will crack in boil? ing for the heated gal to escape. The cost of preserving eggs in this way is about one and one-half cents per dozen. P.y canning eggs in the spring when they arc plentiful, spend? ing ono and one-half cents per do/.en to do so, and holding them until win? ter, one could probably get twice as inudi per dOOOfl for them as be could get by selling thesi now. The yolks of these eggs stand up like those of cgKS Just taken from the nest and the whites will beat into a firm froth. uitivvr r\i:M school.
