Lamb appears to be the basic Item
of the Armenian diet if one is to judge
by the number of Armenian dishes in
which it plays a part. No less than
23 ways of tising this meat are given
in a list of typical Armenian dishes
prepared by >n expert.
Roast In mo with matzoon sauce and j
lamb broiled whole are substantial fen- 1
tures of Armenian banquets. Then
there is boiled lamb, lamb roasted in
paper, lamb roasted with tomato, i
whole spring lamb roasted. Iamb stuff ;
ed with rice, steamed lamb, iarnb broil- ,
ed. hunter style; lamb grilled on skewers,
braised Iamb with wine sauce,
braised Iamb with currie, braised lamb
with tom8to sauce, braised lamb with
onions and braised lamb in paper dishes
seasoned with peas.
v Kouzou kipama is an elaborate
lamb dish in which the meat Is steamed
with scalllon and lettuce; kouzou
guvey is lamb roasted in an earthen
pot with rice and tomatoes.
Eggplant Is a favorite Armenian
vegetable which is often used with the
lamb to ru?ke a delicious dish. Hunkair
beyendi Is mashed eggplant and
potted lamb; patijan cheop kebab Is
fried lamb and eggplant grilled on
skewers; eggplant stewed in lamb
broth and braised lamb and eggplant
are other savory dishes.

Fresh peas, artichokes, string

nions in lamb broth.
Ouscoumri dolma is an elaborate Armenian
dish, composed of mackerel
stuffed with onions, pinenuts and enroots.
fried in olive oil and served cold.
Eggplant stuffed with rice and onions
and cooked in olive oil Is also served
cold. Fassoull pnlaki is beans stewed ;
with vegetables and olive oil and serv- !
ed cold.
Pinenuts and currants are favorite j
ingredients of stuffing, appearing not i
only irf the stuffed mackerel but also J
with rice as a stuffing for turkey in j
a dish tilled Hindi dolma. Harpoot j
keofteh : re delicious boiled meat halls j
prepared with cracked wheat and stuff- i
ed with meat, pinenuts and currants. |
Stuffed vine leaves, yalanjl dolman j
and yaprak sarma are other favorite ,
dishes. The leaves of the grapevine j
are used for the outer wrappings of
these lands. In the yalanjl dolman <
rice and onions already cooked :
through are wrapped In the vine leaves j
and the whole again subjected to a 1
slow simmering process In olive oil. ,

are cooked together or. rather, the rice
Is cooked In a rich stock and then !
wrapped In the vine leaves and slra
mered in oil.
The names of these Armenian dishes
cannot be translated according to their
sound, for hashlaraa Is not an effort
to orientalize the well-known boarding
bouse viand of lamb hash, but
plain boiled lamb, and shlsh lebab Instead
of being a Turkish form of TNT,

It is a pleasant detail in the coming
erection of a memorial at Strasbourg
to Eouget de l'lsle and his "Chant de
guerre de 1'armee du Rhin," which hecame
"La Marseillaise." that the chairman
of the committee in charge bears
the name and Is a direct descendant
k of Mayor Dietrich, in whose house the
