January 14, 1010. - To South Carolina Farmers:? Arrangements have been made with the Columbia Chamber of Commerce for the holding of an educational butter, milk, and cream contest at the coming live-stock meeting, Colombia, S C., February, 1st and 2nd. The object of this contest is to bring butter, milk, and cream from the dairies and farms of the State into competijr tion under au expert judge and grade them according to the national standard for butter aad the Federal score cards for milk and ; cream. While some very good butter is made iu South Carolina, as a rule it lacks uniformity and distinctive qualities. To assist in improving this condition an expert from the Dairy Division, U S Department of Agriculture, will be secured to act as judge and, in addition to placing the scores, he will -explain why the butter, milk, or r cream is not up to the standard and will give suggestions for its improvement. After the show each dairyman enteriug this contest will receive a personal letter giving him the scores of his entries 1 j* and the experts recommendations for improvement. * The comment of an expert judge should be of interest to the dairymen and farmers, and it is hoped that every butter-maker in the State will avail himself of this splendid opportunity to learn how to improve his product. As a special inducement for dairymen and farmers to enter this contest the Columbia Chamber of Commerce i3 offering ?250 in cash , prizes. Every producer of butter, . milk or cream, it matters uot on how email a scale, is eligible to enter this contest. "Write at once to Prof J M Purgess, Clemson College, S C, for entry blanks and rules governing this f dairy products show. Very truly yours, R II Welch. Junior Dairyman.
