Get tree* from known and,trustworthy nurseryman, and a??jd;all tree peddlars. ?' ? ? - t ^.BlflKiilNG Bkef, t&Ci?In answer-lo your correspondent's inquiry as to the best method of salting beef, I recommend thd'Jwo following as excellent English rceoipeta: To four gallons of water add as much salt as will bear the weight of an egg; when tho salt is dissolved, add one ounce of sal prunella and three ounces of salt petre and half a] pound of fair sugar. Boil and skim well. Strain off, and ^?heri cold, but in the beef, mutton, pork, tongues, &c, taking care lo cover the meat well with the pickle. In nine or J^en days it will be lit for use, hut may remain a month without being top salt. Mix well together the following ingre dients: Six pounds of salt, two pound t of .brown sugar, a quarter of a pound of ?saltpetre, and half a pound of allspice. With these propotionn I have fully spiced two rounds of beef and two aitch-bones. Fora larger quantity of meat ndd in exact proportions. Rub' th'e meat well nil over each day for a week ; after this, each alternate day. Turning it, in the pickle every low days will be sufficient for the rest of the time it remains in it. Thia jpicing gives tho outside of the meat a dark color, but flavors it ex eel lcntly. All meat should bo steeped in cold water for a night previous to cook ing it.
