It was sometimes made without spice, unlike the recipes that evolved in later years. Traditional Indian Pudding usually wheyed. In the following recipe, the pudding is baked in a hot-water bath and there’s no wheying; instead a soft texture prevails. 4 cups milk % cup enriched yellow cornmeal Va teaspoon salt A large egg Vx stick butter Vi cup dark molasses V4 cup sugar Heat 3 cups of the milk until bubbles appear around the edge — remove from heat. Stir together in a small bowl the corn- meal, salt and remaining cup of milk. Pour into scalding hot milk, stirring constantly. Bring to a boil over moderate heat, stirring constantly — cook until thickened, about 5 minutes. Beat egg and vigorously stir a little of the hot cornmeal mixture into the egg. Stir egg mixture back into cornmeal mixture, add butter, molasses and sugar. Pour into a buttered IVz quart casserole. Set casserole into baking pan with hot water within an inch from top. Bake uncovered in preheated 275 degree oven for about three hours; top will be a rich caramel color. Pudding may be served warm or chilled — it will remain soft in texture and will not whey. Christmas Baubles Should Not Be Eaten Tree decorations are pretty but care must be taken to make cer tain they don’t wind up in a toddler’s mouth. Every year small children take samples of such decorations as icicles, artificial snow, glistening balls and berries. The things that make them so attractive also at tracts children. Colorful holly berries are toxic when eaten. Tree balls are made of glass and plastic, and in addi tion to causing cuts, could clog the windpipe of a child. IN IRELAND In Ireland, the man of the house sets a two-footed Christ mas candle, usually a red one decorated with holly sprigs, in the main window of the house. It is the custom for the youngest child in the family to light the candle. Some households have a candle for each member of the family. BOXING DAY This is the first work day after Christmas and used to be the day when tenants got their Christmas boxes. The Russian people, long ago, welcomed the New Year in with a hundred cannon shots at mid night. Jewish people have celebrated their New Year’s late in Septem ber or early October. This special occasion is called “Rosh Hash- anah”, meaning “The Feast of the Trumpets”. During the middle ages, March 25th was the beginning of the New Year. Celebrating the New Year is an age-old custom, and nearly all peoples have marked the coming of the year. How ever, the time celebrated has been as early as the autumnal equinox, about September 21st, and as late as the summer sol- tice, about June 21st. Gay Nineties Hostesses, during the gay nine ties, often announced in the newspapers the hours they would receive guests on New Year’s. People arrived in their best finery — silk hats for the men, with chamois skin gloves, and ladies in “stiff bombazine with sealskin tippets”. At times, undesirables man aged to crash the parties; also guests who had imbibed too much caused hostesses embarassment. After guests had departed, the host and hostess often made a round of calls on their friends. At a result, the affair became a calling marathon.
