Helen, that has once been classified Very Good for type, has two production records of 10, 848 pounds of milk and 545 pounds of buttcrfat made as a senior four year-old, and 3,110 pounds of milk and 627 pounds of butterfat made as a five year-old. GRIFFIN PROMOTED TO RANK OF CORPORAL Morris Griffin, son of Eugene Griffin, Route 4, Newberry, was recently promoted to the rank of corporal with the Seventh Army in Germany. Corporal Griffin, overseas since last December, is a medical tech nician at the 32nd # Surgical Hos pital at Pirmasens. He entered the Army in June of last year. Free estimates Corn Meal Makes Delicious Meat Stretcher BY DOROTHY MADDOX /^•ORN bread is always welcome, hot, with butter and maple syrup. ^ But we’ve found it is delicious and economical when used as a meat stretcher. Here are recipes worth trying: Ham Croquettes (Yield: 4 servings) One half cup corn meal, ^ cup water, Vi teaspoon salt, cup boiling water, 2 cups (about 8 ounces) ground, cooked ham; 1 teaspoon chopped onion, 1 teaspoon prepared mustard, Va cup com meal, 1 egg, beaten; 1 tablespoon water. Mix together corn meal, water and salt. Pour gradually into boiling water, stirring constantly. Cook until thickened, stirring frequently. Cover and continue cooking over low heat 5 minutes longer. Cembine ham, onion, mustard and cooked corn meal. Shape into 8 croquettes. Roll croquettes in corn meal. Some corn meal will be left over. Let the croquettes dry one hour. Dip croquettes in the combined egg and water, then in remaining corn meal. Fry in deep fat (375 degrees F.) about 3 minutes. Serve with mushroom sauce, if desired. Note: If self-rising corn meal is used, omit salt. Creamed Chicken on Toasted Corn Bread • - Two cups cooked chicken, 2 tablespoons fat, 2 tablespoons flour. 1 cup sweet milk, 1 tablespoon parsley, salt and pepper. Make white sauce of fat, flour and milk. Add cut-up cooked chicken and parsley and season to taste. Heat thoroughly and serve over corn-bread slices toasted under broiler. • v Corn Bread Three quarters cup sifted flour, 3 teaspoons baking powder,. 1 teaspoon salt, cups corn meal, 2 eggs, well beaten; 1 cup sweet milk (room temperature), 2 tablespoons melted butter. Sift together the flour, baking powder and salt. Add com meal and mix well. Combine beaten eggs, milk and butter and add to Ham croquettes made with corn meal and served with mushroom sauce make a tempting dish. dry ingredients all at once. Stir only enough to just moisten thei dry ingredients. Pour into greased 8-inch-square pan and bake in moderately hot : oven (400 degrees F.) 20 to 25 minutes. It is a living real ity. * . , IRRIGATION WATER FROM WELLS At some places we seem to have enough underground water to do some irrigation from that source. On Cypress Woods Plantation in Jasper, they have a 12 inch well 340 feet deep that the manager, BROTHERS RATED JERSEY OWNED BY PARR A registered Jersey cow owned by Parr Brothers, Route 3, New berry, has been rated a Tested Dam by The American Jersey Cat tle Club. The distinction was awarded Dreaming Sam Btonny for having three offspring with official production records. The cow’s progeny averaged 9,- 239 lbs. milk with 513 lbs. butter- fat on a twice-daily-milking, 305- day mature equivalent basis. The records were made under one of the programs of official testing of The American Jersey Cattle Club, which has its national head quarters in Columbus, Ohio. The Tested Dam rating aids Jersey owners in the selection of superior breeding otock. The three tested progeny required to quali fy a cow as a Tested Dam may be either three tested daughters or three tested sons, or any com bination thereof totaling three. Claude Farris, told me pumped 1,800 gallons a minute. They are putting down others and impound ing the swamp waters too. They plan to irrigate 1,000 acres of fine swamp-land pastures as needed. We are learning more and more about irrigation here as time goes on.
