E. Schilletter, ex tension horticulturist, and Mrs. Dora D. Walker, extension pro duction specialist, in their De cember message to gardeners urging them to begin prepara tions now for next year’s garden. “The body needs calcium and phophorus for good bones and teeth;- it needs iron for red blood. And it must have vitamins to stimulate the use of these building materials. Vegetables help supply the most essentia^ minerals and all but one of the vitamins necessary for health and growth,” the specialists add. Vitamin A, the “conditioner vit amin”, fights certain infections. Excellent sources are green and yellow vegetables and tomatoes. Particularly recommended are- greens, collards, sweet potatoes, yellow squash, ancf string beans. Vitamin B, the “appetite vita min”, tones muscles to utilize food Although vegetables are not the best source of vitamin B, some vegetables contain certain a- mounts of the vitamin. Collards greens, cabbage, sweet potatoes carrots, and okra are suggested for vitamin B. Vitamin C fights scurvy, fatigue, and loss of appetite and weight. Since the body cannot store this vitamin, it must be given a con stant supply through proper diet. Best sources of vitamin C arc orange juice or a double of tomato juice. Other are green vegetables, peas, radishes. Vitiman G controls Green vegetables are about tw as rich in vitamin G as are same vegetables bleached. Iron is found in giu tables and parsnips.
