Studying New Uses
Of Sweet Potatoes
Clemson. March 13.—Since about
50 ncr cent of the average sweet
potato crop is likely to be of little
commercial market value, the
profitable use of the non-market-
able 50 per cent becomes a real

. the Station has prepared a flour
I by dehydrating the potato. Prof.
I J. H Mitchell, chief of the depart
ment, reports that the raw sweet
(potato contains anproximately 70
per cent water and 30 ner cent
(solid matter. When most of the
water is removed the potato be-
| comes brittle and can be ground
(into a flour. The flour is light
! yellow in color and has a pleasing
itaste. It is receiving attention
from home economics experts as
i to its value in recines in everyday
; cookery. Its possible use to re-
i place wheat flour in the diet of

The station chemists have an
alyzed this product and are con-
i ducting feeding experiments on
[white rats with various types of
sweet potato flour to determine its
, nutritional value, its vitamin
potency, etc.
I Sweet potato flour may be readi-
j lv compounded with other feeds to
provide a complete and balanced
! ration for farm animals, the
I chemists state. The flour keeps
for long periods of time and takes
much less storage space, because
of the removal of water, than the ;
raw potato. Experiments now un
derway are designed to show the i
value of the product as a feed for
erws, calves, chickens, hogs, and
other farm animals. The caro- j
tene (pro-vitamin A) of the
product is of special importance
and is being given considerable
experimental attention^
