Cheese Pie
1 cup cottage cheese.
% cup sugar.
2 eggs.
VA cups milk.
% cup cream (sweet or sour).
1 teaspoon salt.
Line a pan with light pastry;
brush the lower crust with white
of egg.
Rub the cheese and cream into
fine mixture; add salt. Beat eggs
and sugar together and add to
cheese mixture. Then add milk
and mix well. Fill crust and dot
with seeded raisins.
Bake, first fifteen minutes in
fast oven (400), then slow down
(375) until just set.
Serve slightly warm.
