In the upper part of the state the weather does not often constitute a serious problem, but in the low er part of the state, it is often necessary to use artificial refrig eration, in order to be insured against loss. Fortunately many ice plants in this section are equip ping cold storage rooms to handle meat for farmers, making it pos sible to kill hogs at any time, be fore they become too heavy or the limited supply of corn Is exhaust ed. Extension Bulletin 77 from Clem- son College and Farmers’ Bulletin 1486 from the U. S. Department of Agriculture at Washington give in formation on butchering, cutting the carcass, and curing the meat, as well as recipes for making sau sage, scrapple, head^cheese, and many other delicious products. These bulletins can be secured through the county farm or home agents, who will also advise re garding the use of artificial refrig eration for keeping the meat. Several short cuts making important r'arm cask easier saving both time and labor outlined oy Mr. Hav/kins. The first of these is to confine the hogs the day before you ex« pect to slaughter them and allow no feed—only fresh water to drink. This partly frees the blood stream and intestinal tract of food mater ial, resulting in an easier job of dressing the hogs, and in better keeping meat. A thorough job of bleeding is necessary, and can best be accomplished by sticking the animal without first stunning or shooting. The second important point is to see that the temperature of the water is 145 to 150 degrees, to per mit a long, soaking scald. The hair and scurf will then come off easily. Avoid using too hot water, which causes the hair to set and greatly increases the labor and trouble of removing it. A bell shaped or candlestick scraper costs little and is a great time saver. Sharp knives are an absolute nec essity. Cooling is facilitated by remov ing the leaf fat and center-split- ting the carcass down the middle of the back bone, after which each side can be hung seperately to al low free circulation of air. After the carcass is cooled it may be cut and che hams, shoulders, and bacon trimmed into smooth, reg ular shapes, avoiding any rougn ends or loose hanging pieces widen may get too salty, or afford har boring places for mold or insects. A curing mixture which has giv en satisfaction is eight pounds of salt, three pounds of sugar, and two ounces of saltpetre, sufficient to cure 100 pounds of meat. The saltpetre should be powdered and the ingredients mixed together, and the mixture rubbed well into the sides, face, and ends of the hams and shoulders, and a somewhat smaller quantity rubbed on the The great quantities of salt sometimes used will make a salty, unpalatable product and will not save the meat under unfavor able weather conditions. Five to seven davs later it should be overhauled, and more of the curing mixture rubbed on.. Hams and other heavy pieces should be overhauled the second time a week later. Bacon with ribs removed is generally sufficiently cured at the end of two wteks» while hams and shoulders should remain in cure about three davs for each pound in a piece of meat. This will give a 14-pound ham six- weeks in cure.
