Ilow To BTOP A 1UNAWAY 11oRN.--8O. eral years ago I attended a lecture given by Htarey, the celebrated horse-trainer, In the course of which he .claimed that any runaway horse could be controlled with a knowledge of the proper treatment, and what I learned from him has served me on more than one occasion during the many years I have driven around New York. -areys directions were as follows: First, to know that the harness is all right, and that the bit and lines are ot proper strength never to drive with a slack rein,and always to keep the feet untramaeled, ready for any emergency; second, as soon as you find that the horse Is running away, with all the power of the right arm jerk the horse head to the side of the neck, at the same time springing to the left of the ve hicle ready to Jump. As soon as done immediately jerk the horse's head to the left side of the neck and change your po sition to the opposite side of the carriage. iepeating this with all one's strength and as quickly as possible, the horse must stop his speed. Under this treatment it is im possible for him to proceed, but it must be done quickly, so as not to allow the horse to straighten his position or to turn around. I have ueen run away with se. eral times, and have always tried Itarey's plan with success. IMPHovING WHiaAT.-Before he can be successful in making the best better by crossing, the experimenter must be thor oughly acquainted with his wheats in every respect. 3hould he wish an offspring with harder grain than either of Its parents, with stronger straw, etc., he must cross varieties that possess elements that will make them so in proper proportions. For instance, . shouid he cross a hard flinty bearded wheat, that makes very poor flour but has fine straw and grain well clothed, upon a smooth, weuk.strawed wheat with tine grain, the offspring,the first year after - crossing, will be of all colors, shapes and qualities-a (ilversity of forms. The heads will be ot various lengths-some bearded and some smooth, ,some poorer in every respect than either' parent, and seoine far superior, to all outward appearances. Af ter the crosEing, and after the first crop is ripe in the field, selection begins. In the first place the best heads are picked that are found on the best straw, and possess the best chaff; next, after shelling,~ head by head, the best kernels are taken just ah the stockinan selects his best pig, pup or chicken to breed from. Now, it may be, id often is the case, that none of theso offspring are worthy or as good as either pareul; if :o try again and again unt: u ces attends your efforts. If the proper rules are observed success is sure to fol l>w, at least in half the trials made by an experienced hand. DQMESTI, A Cuna FOR KoIATIOA.-"A cure for neuralgia and sciatica-and, as I am told, an unfailing one-is too valuable not to be recorded. An English oficer, who served with distinction in the war with Napoleon was once laid up in a small villiage in France with a severe attack of sciatica. 1t so happened that at that time a tinman was being employ ed in the house whele he lodged, and that this tinman, having been himself a soldier, took an interest in the officer's case, and gave him the cure which. in this instance, succeeded immediately and forever, and which I am about to set down. It is at any rate so simple as to be worth a trial. Take a moder ate-sized potato, rather large than small, and boil it in one quart of water. Fo ment the part affected with the water in which the potato has been boiled as hot as it can be borne, at night belore going to bed; then crush the potato and put it on the affected part as a poultice. Wear this all night, and in the morning heat the water, which should have been preserved, over again, and again foment the part with it as hot as can be borne. This treatment must be persevered with for several days. It oocasionally re quires to be continued for as much as two or three weeks, but in the shorter or longer time it hab never yet failed to be successful." BnEA"FAsT BAOON.-The bacon called the English breakfast is made from the belly pork or flank mit below the ribs. This is out Into pieces of eight to twelve pounds each, and is rubbed with a mixture of one pound of salt and one ounce of saltpetre. The bacon is laid skin side down upon a bench or plank and well rubbed and then sprinkled, and one piece is laid upon another. A board loaded with a weight is then placed upon the meat, which is left for three days to drain. It is then wiped and rubbed well with at mixture of four pounds of salt, one pound of brown sugar, and two ounces of saltpotro, and laid in a tub or tray, being turned and rubbed, and changed, the bottom piece to the top, every three days. When it is rubbed it is bathed with the pickle in the tub and then sprinkled with more of the mixture. After three weeks the meat is hung up in a smoke-house and smoked once a week foi' about an hour. CHICKN PANADA (a very nutritious and siwple food, suitable in general illness and conditions of great debility). -Pluck a tender olioken, singe it, wipo it all over with a wet towcl, draw it without breaking the intestines, put it over the fire in boiling, water enough to cover it, with a tablespoonful of salt and a pod of red pepper, and boil it slowly until it is tender. Then free it from skin and bone, rub the meat through at sieve with at potato masher, mix it to a creamy consistonCy with soine of the brol h in which it was boiled, heason it palatably with salt and nut meg, heat it, and use it hot. Fou ToOTuAomn.-Thero aro times in the lives of children when colds are taken, no one knows how, and when toothache is almost unbearable, and yet it is not advisable to have the tooth ex tracoted; one means of relief at such a tine is to cut a large raisin open, roast it, or heat it, and apply it around t.hoi tooth while it is as hot eas it can be borne; it will operate like a little poul tice, aand will draw out the mfilammation. The oysters are put in floats and covered with fresh water two or thriee inches deep). A hose, attached to the boiler of a teamner is then used to heat the wa ter just enough to cause the oysters t'o open their mionts and drink. After taking three or four driinks, they fatten rapidly, and aro soona ready ior the market.
