AGMOULTU1S. SUNFLOwRS.-WO have lately met with a paragraph In several of our ex changes, recommending the planting of a sunflower seed in the midule of each hill ot pole beans, so that the stalk of tile suiatlower, giowing faster than the beans and always keeping a little ahead, would serve instead of a pole, saving to the groVOr considerable labor and expense. tiow this would work in practice we cannotsay, but we do know that for many uses tie sunflower is a valuable plan to raise. It grows very rapidly and when thickly planted around sink drains, privies, anu other unsightly and offensive places, It not only serves as a scrnen, but it also Is saiu to have the property of absorbing malarious exhalations and purifying the atmosphere. The seeds are mucu relished by poultry, and, It not fed too liberall y, ae very wholesome. A cor respondent recommends the seeds as a cure lor the heaves in horses, and says: A gehtleman told me that there is noth. Ing equal to sunflower-seeds for that purpose. He had one bushel of the seus ground with two bushels of oats, and gave a horse two quarts of the mixed meal, wet in water three times a day. He took the time when the horse was not used to hard work. In two weeks not a sign of the heaves could be observed, and the horse looked as sleek and bright as If his hair had been oiled. lie had cured two horses of his own of this distressing complaint, and recommended it to others who had experienced a like result. In cases of horse-distemper and coughs, it is an excellent remedy. PERMITTING YOUN FRuIT THEs TO B.AR EAnY.-It very frequefitly ha) pens that young pear and other fruit trees blossom and, if pernitted to do so, bear fruit the saieseason that they are planted. We have had the blos soms and fruit of such trees poitted out to us as evidence that the trees were thriving particularly well. Such evidence, however, Is indicative rather of weakness. There Is nothing more harmiul to young trees than to permnit them to bear fruit the year of trans plantation. Even for dwarf pears, the third year Is soon enough for (hem to bear, and the sixth year is soon enough for the generality of standards. Our readers will find that if they sull'er young trees to'mature fruit the first or second year, their vigor will, in most cases, be impaired forever after, and having borne at this early ago, they will not, as a rule, bear again in five or six years afterward. It is be cause we yielded to such temptations. that we are now able to guard our readers ngainst falling Iito the same error. Fruit-bearing is an exhausting process, and only trees that have ar rived at a certain a.e or maturity can exercise the function without endan gering their health and strength. Ioi.-What was done before ice came into use? In oriental countries the devices were few and simple. QUAKER OMI.r.-A Quaker omelet is a handsome and sure ULsh1 when care is taken in 'the preparation. Three eggs, lialf a cup of milk, one and a half tablespoonful of corn starch; one tablespoonful of butter; put the omelet pan and a cover that will fit close on to heat; beat the yolks of the eggs the corn starch and the salt very well to gether; beat the whites to a stiff froth, add to the well beaten yolks and corn starch ; stir all together very thorough ly, then add the milk; now put tile butter in the hot pan, and when melted pout in the mixture; cover and place on the stove where it will brown but not burn ; cook about seven minutes; fold, on a hot dish, and serve with theo cream sauce poured around it. If tile yolks and corn starch are thoroughly beaten, and when the stiJT whites are added they are well mixed, and the pan and cover tre very hot, there can be no failure. P3INEAPPLE UH Z1REAM.-Press the juice from a fine ripe plucapple; add that of a lemon, with syrup or pounded sugar to give the requited sweetness; imix with an equal quantity of rich crean and strain into the freezing pot. or, make a custard as follows: Boll a pint ofi milk, pour It while boiling on the yolks of six eggs; stir rapidly over the tire until it thickens. taking care not to curdle it. With a little experi once a perfect custard may be thicken ed In this way in less than seven mn utes, a much longer time being required if the milk is not boiled. When cold add pineapple pull), made as follows: lull a pound of pineapple, sliced and peeled, in a gill of water for ten min utes :1pound the fruit and rub it through a sieve, and add syrup or sugar to taste. When cold mix with the cus tard and strain into the freezing pot. Lemon juice canl be added if necessary.
