Gnowzo PECAN N urs.--It Is certain
ly to be regretted that ouar People can
not more fully appreclate the pecan as
a crop to be cultivated. Thousands
upon thousands of well-arranged and
carefully cultivated grov4's ought now
to be coming on in all parts of the low
er Mississippi valley ; yet., strange as it
may seem, they are just about as few
and far between as angels' visits.
Why? I cannot tell, inless it is mere
ly another case of the "prophet in his
own country,'' the pecan being "only
a wild tree,;' you know. Possibly we
would all have English walnuts, would
they grow with us as readily as does
the pecan, and yet there isal ways ade
mand for the fruit of the pecan, and It
Is really more prolltable than that of the
Engliblt walnut. We ought to put out
pecan trees. Neglecting to do no uay
be wronging ourselves, and It is un
doubtedly wronging tho generation to
come after us. h'lere can be no doubt
of the fact that the man who leaves to
his posterity a flourishling grove of pe
can trees, leaves themu a legacy almost
as good as a gold mine. That is whams

properly cared for, would be worth, all
things considered, just about as Much
as an olive grove of the same sire.
The pecan starts readily fromt seed;
most of the nuts oilored for sale in the
shops will germiniate promptly if care

SOME hwEET SAUCES.---I rather tfilnli
pudding sauces are Eiiglish rathio
than French, as French cooks, at loasl
such as I havo seen, rarely go in foi
much sweetening. It's very much of
a mistake to make a pudding sauce tot
greasy or pasty. Hero is a fair recoip
for a sauce good for puddings: 1. Gratt
intlf the rind of at lemon, Itlnd add to it
an ounce and a half of white sugar and
two tahlespoonsfuls of water, and let ii
slm ier for ten minutes; take an ounce
of butter and wash It thoroughly In
fresh water, changing tle water twice;
inix that with not mtor" duan a half tea
spoonful of flour (more flour than that
spoils It); stir thut Into the sugar and
lemon and let It )oil, but not for a
longer time than two minutes; when It
is cooling put in a teaspoonftl of letmoi
juice and a wineglasaful of Medeira. I
think the sainecutantity of good, sound
red wino is just as good. Warm it all
gently once more. If you boli it after
wine Is put in the flavor of the wine
goes oil. Thia is for funcy, delicate
puddings. Sauc No. 2 for di111mp Iings
-This Is a lough-and-titmble kindcl of

thing. Equal parts of brown sugar and
butter well mixed up, into which you
