Fruit Carl.—Two and a half cups of silled flour, three eggs, two-thirds of a cup of butter, two-thirds of a cup of brown sugar, one- half cup of molasses and one teaspoonlul oi cream of tarter, one pound of raisins, cloves and cinna mon to taste. Cheap Cake.—-One egg, one cup sugar, one tablespoonful of blitter, two" thirds of a cup of milk or water, nearly two cups of flour, heaping tablespoonful of baking powder, nutmeg to taste. Minute Sponge Cake,—Beat eggs two minutes; add one Cup and a half of sugar ; bent two minutes ; one cup flour, one ice spoonful cream tarter ; heat one minute ; add half a cup cold water with half teaspoonful soda and teaspoonful extract of lemon ; beat one minute; add one cup of flour; beat one minute. Good Fineoar—-To three quarts of molasses add eight gallons clear rain water, put into a good cask and shake it up well a few times, then put in two or three spoonfuls of yeast or two yeast cakes ; if in the summer, place the cask at the warmest side of the house ; if in ’cold weather, near the chimney where it may be kept waim. In ten or fifteen days add to the liquor a sheet of brown paper tom in shtods and dipped in mo lasses. Good vinegar will be produced in about six weeks. Kkrosine for the Hair.—It should bo applied twice or tlwee times a week, and well rubbed in with the finger ends. It is said that' there will be no odor of it left in half an hour after using it, and that it will restore grey hair to its natu ral color. Cure for CmLBl.AjVs.—Slice raw potatoes, with the skins on, and sprinkle over them a little sail, and as soon as the liquid therefrom settles in the bottom of the dish, wash with it the chilblains / one application is all that is ueccessary. Proverbs In Cooking. Good flour is not tested by its color. White flour mav not be the best. The w • test of good flour is by the amount of water it absorbs. In cooking a fowl, to ascertain when it is done, put a skewer into the breast, and if the breast is tender, the fowl is done. To beat the whites of eggs qnickly put in a pinch of salt. The cooler the eggs the quicker they will froth. Salt cools and also freshens them. Never put a pudding that is to be steamed in anything else than a dry mould. Never wash raisins that are to be used in sweet disbis. It will make the pudding heavy. To clean them wipe them with a dry towel. The water used in mixing bread must be tepid hot. If too hot, tha loaf will be full of great holes. To boil potatoes successfully, when the skin breaks, pour oft the water and let them finish cooking in their own •team.
