It is a well-known fact that milk t does sour, but not everyone is at- f quainted with the changes which take place during the souring process, the cause of these changes, and how to prevent tfiem. A knowledge of. the chifinges. which take place during the I period of souring, and their causes, enables one, taking reasonable precau- 1 tions, to preserve milk in its naturally sweet condition for a number of addi- c tional hours. 'l Milk contains a sugar, known as milk s,ugar, which is changed by the action of the smallest of plinut forms, called bacteria, into lactic ueId. When about one-half of ohe per cent of this acid has been produced, the milk-curd separates and forms a solid mass with clear acid wihey. pbout it. This acid preserves the curd by preventing the action of bacteria which would rot the curd and produce offensive odors. Two classes of bacteria begin to grow and multiply in -milk shortly aft er milking; the lactic which sours the t milk, and the digesting which rots the t curd. The latter class is like the oat- t plant, in that it is able to grow at a low temperature, while the lactic, t like the corn-plant, ggows best at the I higher temperatures. Milk which is held at well-water t temperature will remain sweet for one I C t t QI~i SC * 0 0a Types of Sanitary Milking Stool&. or more days. depending upon the cleanliness of milking and handling, because tHie temperature is low enough to prevent rapid growth of lactic bac teria. This temperature, however, is more favorable for the <qigesting class of ~ bacteria, which' imparts an old, stale ~ odor to the milk, and renders the milk partly unfit for use. If milk is kept ~ on ice almost from the time of milk- C ing, there will be but very little devel opmuent of either class of bacteria, and C the milk will be in prime condition t after several dlays. For the most rapid cooling of milk, I the following points should be ob served: 1. That cold air is better than no aittemapt at cooling. 2. That cold wvater is more rapid t than cold air. 3. T1hat an occasional stirring hast ens the cooling process. 4. That ice water is much more rapid than air of the same tempera-t ture. 5. That a mixture of ice water and salt is the most efficient cooling agent. To insure pure milk, free from im- ~ Purities, the utmost care must be taken in every part of the dairy from the barnyard and stables to the bottling of the milk. Absolute cleanliness is essentiai. Irdn milking stools are recommended and they should be kept scrupulously clean. No. 1 is a good type of sanitary stool made of metal. The ends of the pipes used for the legs are filled with lead, and there are no corners to col lect dirt. Nos. 2 and 4 are similar to No. 1, except that caps are screwved on the ends of the legs, muakingthem slight ly more difficult to keep clean. No. 8 serves for both pail and milk stool. The cover, hoops, bail, etc., make it more difficult to keep clean than the simpler styles.. No. 5 is devised so that one end serves as a receptacle to hold the pail while the milker sits on the other end. As in the case of No. 8, this style is more difficult to keep in a sanitary condition than the simpler forms. No. 6 is constructed entirely of iron, galvainize'd after -being put together. It is simply constructed, having only ,a single leg. The base, however, fur nishes a larger surface to keep clean. Of the several stools shown herewith, No. 1 is thme easiest to keep clean, y therefore the most desirable. ,T'he three "C's" for the proper care of -iilk in the home, according to dairy 1 Specialists, are: * Clean. The time for fall plowing should be argely a matter of convenience. The envier soils can be safely plowed irst. Land with a great deal of vege able matter to be turned under should e plowed early in order to give this iatter more time to rot. In the spring here is not always time for the prop r preparation of the soil, especially vhere the crops are to be planted arly, so it-is good farm management o do a part of this preparation in the all. It isn't always the best plan to plow, andy lands in the fall unless they are LIso seeded to a cover crop, otherwise here is apt to be much loss from eaching and erosion.
