These words make almost any man smie, but too C'ft^n he will be disappointed in the eating because potentially good pork is often ruined by ignorance of* the essentials of meat curing. Weather' conditions affect meat curing to some extent but they can he overcom^. The pork carcass should he divided on the basis of lean or fat, thick or thin. Properly divided, there \\i!l he ham, loin, bacon, shoulder and Head, says D. T. Herrman,-extension swine specialist, who nvikes the following suggestions on curing meat: The ham is cut off just hack of the rise of the backbone and a. right ai-glcR to the leg. The shoulder is cut off between Ihc third and fourth ribs and at right angles to the body. The bacon is cut from the loin just below the tenderloin muscle on the rear part or th.0 'viddlc nnd parallel to the baclr. All of these cuts require tramming and squaring. This improves tho appearance cr the finished product and makes for uniform curing. No more lean meat th.'in necessary should be exposed, as curin?r hardens it. All loose pieces shouldbe trimmed off, for they dry out in curing. The loin and sausage are used for fresh meat and the remainder is cured. The first essential to successful curing is thorough cooling, but the meat snould .not be frozen at any time. lOther brine or dry curing will be satisfactory. Brine requires less work unless it gets ropy and in this case it must be drawn ofT and boiled or a new brine made. Brine also keeps away insects and vermin. During weather the dry method is much safer. Whichever method is used, it is adVisible to rub the surface of the meat with fine salt and allow it to drain for six to twelve hours before packing in the cure. Brine Method of Curinir. For brime curing use 10 pounds of salt, 2lit pounds of sugar, 2 ounces of altpeter. 4 V/ gallons of water for every 100 pounds of meat. Boil these in the water so that tliey will he thoroughly dissolved and allow to ool. Pack hams in the bottom of the container, shoulders next and the bacon cuts on top and pour on the brine, being sure that it covers the meat. In five days draw oil' the brine, reverse the order of packing and pour 'he brine back again. Repeat this operation on the tenth and eighteenth days. Allow four days cure for each pound of ham and shoulder in a piece and three days for each pound in a piece of bacon. Dry .Method For dry curing use (> to 7 pounds of salt. 2 ' j pounds of siu;v>r, 2 ounces of saltpeter 1'or every 100 pounds of meat. (Two ounces of red pepper and 1 ounces of black pepper may bo used if desired.) Mix thoroughly rub one-third on the meat the first day and pack; unpack on the third day and s-ul) iti one-third more and repack; and on the seventh day rub on the .emainder and pack the meat to cure. Allow two d/iys in the cure for each pound in a piece of bacon and 2';> days for each pound in a ham or snouioer. Much of the superiority of packers' moat comes from proper soaking after curing and before smaking. This brightens the meat and removes excess salt, which will harden and form a crust if left on through the smoking process. The packers use water at about <>5 degrees Fahrenheit and soak hams or shoulders two hours, bacon I1- hours. Sometimes meat must be left in the cure longer than the standard time and then they- add three minutes extra for each day over time. After hanging about three hours to drip, the meat is ready to smoke. Green hickory or maple makes the besl smoke, but any hardwood will do. Soft woods or resinous woods are very unsatisfactory. A mild smoke of 21 u> 30 hours is most common. Twelve .lours should be the minimum, and meats that are to be kept into the umnvr should be smoked longer th.:n '?(> hours.
