Only substitutes which arc harmless are permitted ir. foods under the terms of the law, and those that aie permitted should be stated clearly on the labels. The object of the regulation rer|Ui' ing that substitute bo do hired on th : ' labels is not to limit in any way the use of wholsomc substitute s. the officials state, hut to let the consumers j; know what they are getting. A purchaser of ans food product, of which i sugar is a normal ingredient, will i naturally expect, to get sugar in that ' product unless advised to the contrary ! As substitutes are usually cheaper j1 than the substance for which they are used, it is only fair both from the standpoint of the purchaser and i from that of fair trading, that a I clear distinction be made on the la- 1 hels between foods that contain all : the normal ingredients and fee's in i which one or more of the normal in- < gredients is replaced by a cheaper substance. Substitutes That May Be Used. There are a number of substitutes for sugar which can very properly be used in manufactured foods such as jams, jellies, marmalades, pop , soda waters, confections, and the I ke. The laws r regulations of most of the States r ilso prohibit the use of saccharin in s oods. A number of food manufac- t urers have been convicted for ship- f )ing into interstate commerce foods t idulterated with saccharin. A crim- i nal prosecution is now pending j igainst one of the manufacturers of j .accharin for shipping it labeled as } ?nrmlr??c within the jurisdiction of he Federal Food and Drugs Act. Liable of Seizure.
