PACK TWO USE MOUSSES IN PORK-CURINS RECIPES In the present sugar shortage it i* l dvisable, even if sugar can be procured, to use molasses or some kin 1 of sirup in place of it in the formulas used for curing pork, according to United States Department of Agriculture specialists. If sugar is used for dry curing, it i' better, anyway, to make it into a sirup before using, for salt mixed with sugar will n A stick 011 meat as veil as salt mixed with simp. Tie use of molasses or comnvrcial simp does away with this extra work. The following formulas have been found to give good results: Sueet I'ickle or Brine Cure. Select pieces rj pounus cr loss. Make a pickle consisting of: <J\ 1 -2 pounds salt. 1 3-4 pounds simp or molasses, or if' prefrorred, 1 1-4 pounds sugar, pr:> ferably brown. 1 ounce saltpeter. 2 1-4 gallons water. (These amounts are based on 50 pounds of meat. If more or less meat is used, the amounts of the ingredients should be correspondingly increased or decreased, as the case may lie. Under no circumstances should the individual piece of meat weigh over 12 pounds.) Place the meat in a stone jar or hardwood barrel, and weight it down with a board and stone. Do not use iron, for it will rust. Then pour in just pickle enough to cover the meat. Leave the meat in the pickle 3 days to the pound of meat, so that a 10pound ham would he left in the pickle for 30 days, and a 6-pound bacon, 18 days. After the meat has been in cure a v.eek, take it all out of the jar or SALE UNDER MORTGAGE. Under and by virtue of a mortgage of crops from M. J. (Applicable to either light or heav> meat.) Mix thoroughly? 3 1-2 pound salt. 1 1 ounce saltpeter. 1 ounce red pepper. 1 ounce black pepper. Then add 1 1-2 pounds warm simp or molasses, and mix with the above until it assumes the appearance of sawdust. Apply a liberal coating of the above mixture to all surfaces of the meat, excepting the skin. GUERNSEYS AT THE I LEE COUNTY FAIR , Clemson College.?The exhibit of Guernseys at the Lee County Kail ' was the best in the South this year. acording to D. D. Elliott, Extension 1 Dairy Agent, who adds that, although there were not as many Guernseys at i.his Fair as there were at the Chester ' County Fair, the animals at the Lee ) County Fair were all in fine show* [' condition. It is remarkable that of . the 56 Guernseys exhibited there was not an animal out of condition. The exhibitors of these 56 excellent r dairy cattle were James Mcintosh, Dovesville; Albert James, Darlington; L. II. McCutcheon, Bishopville; R. A. Smith, Lynchburg; W. M. Bell, Harts ville; W. B.
