pound of rice; drain and shake dry;

season with salt and pepper and dot
with bits of butter. Grate a quarter
j of a pound of cheese, and sprink e
each layer of riec with the cheese.
Let the last layer be of rice. Whip
one egg with a gill of milk, and
pour over all; sprinkle with crumbs,
dot with butter, and brown in tlie
oven.

and keep in a very cold place until
ready to serve, when cover wiih a
j mayonnaise or.salad dressing.

I somewhat novel way of cooking the
luscious bivalve, railed by our Ku
gliHi cousins "I'igs in Blankets."
We prefer it without the name.
Have as many thin slices of salt (not
smoked) bacon as you have large
oysters; wrap each oyster in a slice
of bapon, and fasten with a tiny
skewer?a small wooden toothpick i
will do; have ready a hot frying-pan
and lay them in side by side turning
to allow the bacon to color slightly
all around' Have a tiny square of
thin, buttered toast for each one;
add a tablespoonful of butter and a
spoonful of milk or cream to the |
liquor in the pan, pour this equally
over the toast, lay oim of the rolls 011
each, ai d serve.

back of the stove, and bones, scraps!
of meat and vegetables put into it

mess good soups run bo obtained.
If there is a family of any size, there
should bo enough of the bones and
remains of poultry and meat and
game to make a roup at least four
times a week without buying fresh
meat for the purpose. The most
satisfactory way to do this, however,
is to keep a dish in your larder or
ice box, to receive such hits and the
cold gravies for a day or two, and
then make as much broth rVotn them
as thtfir quantity will allow. In a
hoarding-house, or a very large family,
it may he possible to keep a
stock-pot constantly simmering, but
the broth should bestrai icd off and
the hones and vegetables thrown j
out every twenty-four hours.
Vegetables should not be put into
it until an hour before the soup is to
he removed. If soup is to he boiled
three hours, use one quart of cold
water to every pound of bone and
meat, in the proportion of one of the
former to three of the hitter. If it
is to boil six hours (and where time
is no object this should always he
allowed), ad J two quarts to every
pound of meat; this will reduce to
one quart by boiling must he slow
and steady, and the skimming must
ho thorough* Inattention to these

it dark. Abut one hour before the
stock is done, ad 1 the usual bunch
of soup herbs, one carrot, one turnip
and one onion stuck with three clo ves.
This is the proportion for four j
quarts of plain stock. Simmer an 1
hour longer, strain into an earthen 1
jar, and leave it stand to cool, //n con-'
cre<!. 1 f there is time to let it get
perfectly cold, the fat maybe remov
ed in a solid cake; if not it may be
skimmed off, ami in either ease it is
excellent for frying. Many housewives
do not find it necessary to use
a hit of lard, preferring beef suet
tried out and mixed with tho clarified
fat from the top of soups.
