CAMP Extension Home Economist Patio Living can be as lux urious as a cruise or a stay at a resort hotel. Unless the family so desires, there is no need to rough it outdoors. Cook ing is a breeze with the aid of electric appliances, gas-fired grills, electric grills, and bat tery-operated slicing knives. The man of the house be comes the master chef and reigns supreme over this array of cooking appliances. The boy scout of the family can take it easy because there is no fire to build, no wood to gather or char coal to tote. The kitchen can literally move outdoors. Weatherproof electrical outlets placed at strategic positions make out door living, electrical living. There is even a small refrig erator on a wheeled cart that can be used to keep food and beverages cold. Patio living is also flexible living. If a grill is an abso lute necessity to give the feel ing of outdoor cooking, one can select a gas-fired grill, an electric grill, or one that uses charcoal -- these range in size from the small hibachi to the huge roll-about cart complete with rotisserie and warming ov en. Paper or plastic plates, cups, platters, and bowls cut down on breakage, and in the case of paperware, eliminate much of the clean-up chors. Stainless tableware is available in inex pensive sets so that loss of a spoon, knife or fork is no tra gedy. Roll-about carts, some with heated trays, ease the task of carrying food and appliances to the patio. Folding tea tables provide good tabletop surfaces for dining. A screened porch, an open terrace, a pool-side location art all ideal for dining and re laxing outdoors, particularly if the area is readily accessible to the kitchen. A sun umbrella, shade trees or plastic roofing over the area helps to keep it cool and pleasant on sunny days. Organization both in the kit chen and outdoors plays an im portant role in the enjoyment of patio living. Advance prepara tion of foods makes for easier cooking outdoors. For example, ground meat can be shaped into uniform patties before refrig eration or freezing. If they are packaged for freezing, wrap one family-meal portion in a single package — six hamburgers will serve three to six people. When barbecuing chicken parts they should be ready to go on the grill or into the fry pan im mediately. Rinse and pat dry -- or even bone them beforehand. If they are to be cooked in foil, wrap individually and refrig erate. Open foil packet before cooking to add barbecue sauce. Pre-slice the buns before taking outdoors. Put condiments in small plastic or stainless steel serving bowls so that there will be no danger of breaking the original glass container. Serve salads in wooden or plastic bowls. Decide what appliances are to be used. Make sure that exten sion cords are of the correct size — heavy duty with moisture proof insulation is recommend ed for safety. Place appliances on a cart to wheel outdoors. Have a sturdy table to support them properly, preferably one that is convenient for cooking. Keep away from moisture, keep handles turned in, make sure they are plugged in properly -- not all in one outlet. Heat-pro ducing appliances draw a lot of electricity and an overloaded circuit can short out or blow a fuse. Here are some of the applian ces that serve double duty in the kitchen and on the patio: Electric water kettle for tea or coffee. Electric fry pan. Some have high domes for roasting. Electric rotisserie- broiler. Most are smokeless. Electric saucepans of several sizes for sauce, haflHwy vegetables soup, cooking con, baked beans. Also griddles for hamburgers, frankfurters, pn- cakes, steaks, eggs, or heejptaf foods warm. A coffee on for serving up to 30 cups of cof fee. Hot trays for keeping food warm.
