CAMP Extension Home Economist A consumer in the market for a new range faces many choi ces. The right range for a par ticular buyer depends on her kitchen, her pocketbook, the size of her family, the way she en tertains, and the daily routine of her family. The buyer has to decide how much an automatic feature is worth to her. What does it do? Can the dealer tell her how much it will cost? Is it apt to have a service prob lem? Is some new feature a gim mick to show off to the neigh bors and then to be forgotten, or will it be used time and again over the life of the range? But before considering fea tures there are a few basic de cisions. Size and style of a range affect its cost; so does the cost of installation for built-ins. Another basic choice is that of electricity or gas, and this pro bably will depend on which is a vailable and on personal prefer ence; there are some differences in features offered. Local utili ty rates may favor one or the other and help swing the deci sion. A three-wire service is needed for an electric range. If the service provided is 208 volts rather than the more customary 230 or 240 volts, get a range made for 208 volt operation. A range rated for 240 volts will not broil as well as it should; the oven will be slow to reach baking temperature, and surface units will not produce the in tended heat on 208 volts. If nat ural gas is not supplied to the house, liquified petroleum gas may be used, but the range should be one designed for use on l.p. gas. Safety is a prime considera tion. The UL seal indicates that an electric range has met mini mum safety standards in respect to electric shock and fire ha zards. When buying a gas range, it is well to choose one with the blue Star Seal of the American Gas Association; there are still many low-cost ranges beingpro- duced with potential hazards such as match-lit ovens (for AGA cer tification the oven must have an automatic pilot). Catalytic as well as pyrolytic gas self-cleaning ovens are now offered. On dif ference for the user between the pyrolytic (high temperature) self-cleaning system and the catalytic (with a catalyst in the oven porcelain to promote low- temperature oxidation of soil) is that the pyrolytic oven can get as soiled as a conventional one, but it is completely cleaned when put through a cleaning cycle; catalytic ovens don’t get as soil ed because cleaning goes on dur ing the cooking process, but this cleaning may not do the complete job. Thermostatic surface cook ing has been an optional feature on both gas and electric ranges for more than 10 years, but many homemakers still don’t under stand its use. Used with appro priate cookware, a thermosta tic unit or burner performs as an automatic frypan or saucepan would. It maintains the desired cooking temperature, responding automatically to the addition of a cold food or to the thawing of a frozen food. It automatically raises and lowers the heat in put as needed, eliminatingagreat deal of pot-watching. Usually only one burner or unit on a range is thermostatic, although all the units on the new type of range with a glass ceramic surface may be thermostatically con trolled.
