An average apple yields only
90 calories, its bulk satisfies
hunger, and its natural sugars

APPLE STUFFED PORK CHOPS
6 pork chops 1-inch thick, slit
for pocket - 2 tablespoons finely
chopped onion - 4 medium tart
apples, diced - 3 tablespoons
sugar - 1/2 cup chopped celery -
1 1/2 cups soft bread crumbs -
flour, fat, salt, pepper, tooth
picks or skewers
Combine diced apples, onion,
celery, bread crumbs and sugar.
Add dash of pepper and salt.

Stuff each pork chop with mix
ture, fasten with tooth picks or
skewers. Salt and pepper each
chop. Coat with flour. Brown
slightly on both sides in small
amount of fat. Add enough wa
ter to just cover bottom of pan.
Cover with tight-fitting lid. Place
in preheated oven (300 degrees)
Bake for about one hour. Chops
may be cooked on top of stove
over medium heat. NOTE: One
cup thick apple sauce may be
substituted for the chopped ap
ples.
APPLE PANCAKES
1-1/2 cup sifted flour; 2 teas
poons baking powder; 1 table
spoon sugar; 1/2 teaspoon salt;
1 egg; 1 cup milk; 2 tablespoons
melted fat; 2 cups finely diced
apples.
Sift dry ingredients together.
Beat egg, add milk and fat; add
gradually to dry ingredients stir
only until batter is smooth, do
not beat. Fold in chopped ap
ples. With a spoon drop onto hot
greased griddle. Cook slowly as :

WALDORF SALAD
4 tart apples, diced; 1 cup
celery, chopped; 1/2 cup nuts,
broken; 2 tablespoons lemon
juice; 1/3 cup mayonnaise; Dash
of salt.
