Coat with flour. Brown slightly on both sides in small amount of fat. Add enough wa ter to just cover bottom of pan. Cover with tight-fitting lid. Place in preheated oven (300 degrees) Bake for about one hour. Chops may be cooked on top of stove over medium heat. NOTE: One cup thick apple sauce may be substituted for the chopped ap ples. APPLE PANCAKES 1-1/2 cup sifted flour; 2 teas poons baking powder; 1 table spoon sugar; 1/2 teaspoon salt; 1 egg; 1 cup milk; 2 tablespoons melted fat; 2 cups finely diced apples. Sift dry ingredients together. Beat egg, add milk and fat; add gradually to dry ingredients stir only until batter is smooth, do not beat. Fold in chopped ap ples. With a spoon drop onto hot greased griddle. Cook slowly as : for ordinary pancakes. WALDORF SALAD 4 tart apples, diced; 1 cup celery, chopped; 1/2 cup nuts, broken; 2 tablespoons lemon juice; 1/3 cup mayonnaise; Dash of salt. ing; 1/2 teaspoon salt; 3/4 cup sugar. Mix apples, celery, nuts and dash of salt Stir lemon juice into mayonnaise and add to ap ple mixture. Serve on crisp let- Peel, slice in eighths and core tuce or celery leaves. Garnish apples. Place in shallow butter- with slices or wedges of unpeel- ed baking dish. Pour water, lemon ed apple or with red cherry, juice over apples. Mix cheese, sugar, flour, cinnamon, shorten ing and salt. Sprinkle over ap ples. Bake in moderate oven 350 degrees F. until apples are ten der and crust is crisp or about 30 minutes. Serve warm or cold with or without whipped cream or ice cream.
