It’s pure aluminum; a large block of solid metal is rolled, much as pie crust is rolled, until it becomes a long, thin, continuous sheet Aluminum is friendly to food - it’s one of the elements most commonly found in the earth and is present in all foods. That is why it is the ideal wrap for use with food. When to use regular 12-inch wide aluminum foil: Use this lighter weight foil for wrapping foods to be stored in the re frigerator, for sandwich wrapp ing, packaging cookies to send through the mail, for short-term freeting and many other uses. When to use heavy duty 14-inch broiling or 18-inch all purpose foil: This is the foil for lining the broiler pan and the outdoor grill. Use it, too, for lining roast ing and baking pans for roast ing the turkey and wrapping foods to be baked in the oven, for all uses where liquids are to be held secure with no leakage. Heavy duty is the foil for freeting, too, since it provides the best pro tection against drying out, loss of flavor and color. Let’s clear up the old quest ion, which side should go on the outside, the shiny or the dull? It really does not matter. In rolling, one side of the foil be comes shiny; the other - not in contact with the heavy roller - comes out with a mat finish. Here are other tips on foil use: Don’t use too much foil - just enough to conform to the pan or just enough to wrap or seal the food. More than enough serves no purpose and may delay heat penetration. Tight sealing - it’s not always necessary. Even when foil is just loosely folded over food, fla vors and much moisture are held in. Airtight sealing is directed in some recipes where all liquid must be prevented from evapora ting. Puncturing - it is a fact that sharp bones, the use of sharp kitchen tools or too rough hand ling will puncture foil. Heavy duty is stronger than standard, but all foils must be used with a little care to avoid puncturing. Don’t try to cover a shelf in the oven with foil, as this will interfere with heat circulation. If you wish to use foil to catch boilovers from a pie or casse- role dish, use a small piece just a little larger than the food and don’t place it on the same shelf. Place it on a lower shelf so some heat circulates under the food. Turn up the edges of the foil around to catch the liquid. Some foods will cause a slight discoloration on foil - it is si milar to the tarnishing of silver, and is harmless. Some foods high in salt or acid or both may cause perforations in foil. Cold cuts, spaghetti sauce and salad mix tures are offenders. Why does poultry skin some times stick to foil? The skin of chicken and turkey has a gela tinous substance which some times sticks to foil or anything it comes in contact with. When roasting poultry in foil, prevent this from happening by placing a few slices of onion, carrot and/ or celery on the foil, then plac ing the bird on the vegetables. This prevents direct contact with the foil. When wrapping poultry be sure it is brushed with soft butter, margarine or other fat. Coker, are organized into a number of active clubs and auxilaries which work for the advancement of the church. The Sunshine Club has been faithfully active since it was or ganized over 20 years ago.
