Calvin Koonts, head of the de partment of education at Erskine College. “Straws in the Wind’ is the result od Dr. Koonts’own dreams at Longwood, his beach home at Ocean Drive. The volume of 67 poems of heart, home, and sea---the author’s first collection of verse ---is being published October 1 through the State Printing Com pany in Columbia. A limited gift edition of 500 copies is available at the Erskine College Campus Shop, and the volume may be ordered for $4.95, including tax and postage, from ‘Straws in the Wind,’ P.O. Box 163, Erskine College, Due West, S.C. 29639. Each of the 500 first edition copies will lie auto graphed. The front cover for “Straws in the Wind* was designed by Ruth Sloan Todd of Clinton, a 1968 graduate of Erskine, who also drew the sketch of Dr. Koonts on the back cover. Dr. Koonts has announced that a share of the proceeds from the book will go to establish a Koonts Poetry Prize to be given an nually at Erskine graduation to an English major who plans to teach in secondary school and who shows outstanding poetic a- bilities. BY HELEN CAMP Extension Home Economist In most homes in this coun try, eggs are a staple food that homemakers find indispensable in planning and preparing family meals. Eggs can be served in so many ways and are an in gredient in so many types of recipes that they are likely to appear in some form at any meal. For example, eggs are used to: -thicken, as in custard pud dings. -leaven, as in cakes, souffles, puffy omelets. -coat, as in breaded neat, vegetable, croquettes. -bind, as in meat loaves,cro quettes. -emulsify, as in salad dress ings, cream puffs. -clarify, as in consomme, “broiled* coffee. -hinder crystallization, as in candy making. -garnish, as in canapes, salads and soups. And, in addition to their ver satility as a food, eggs make a worthwhile contribution to the nutrient content of diets. They are highly valued as a source of protein, iron, vitamin A, and riboflavin, and are one of a few foods that contain vitamin D. Be cause their protein in eggs is complete, furnishing all the amens acid essential for build ing and maintaining body tissues, eggs make a good alternate for meat. Nututionists usually suggest that a person eat from four to seven eggs a week, including those used in cooking. If you are counting calories, you can figure that a large egg has 80 calories, 60 of which come from the yolk. For uie reason or another, there is a great deal of folk lore surrounding eggs.
