How is it identified? A. It comes from the section known as ham w'hich is the leg. Cured and smoked, it has the characteristic color, a deep pink. It is identified also by the several muscles in the meat as well as the small round bone. Q. How is it prepared? A. By broiling, panbroiling, pan frying or roasting (baking). This meat cut is also a good choice for broiling on an outside grill. When cut one- half inch thick, the ham slice will broil in 10 to 12 minutes; those cut an inch thick will broil in 16 to 20 minutes. Both times given are for the total cooking period. Have the ham slice two to three inches away from the heat whether cooked inside or out. Thinner ham slices, those less than one-half inch in thick ness, are best when panfried. Tall Screens Liven Wall A window less end wall of a single-story house looks blank- hut needn’t. Give it dimension and character with three screens built to make tall, vertical ac cents between the ground and roof overhang. One effective pattern uses cedar 2x2s spaced two inches apart, or 1x4s turned edge out and spaced. Use a row of spacer blocks two-thirds of the way from ground to eave and another row just two feet above ground as horizontal bracing—a sort of built-in rail. Nail the verticals to a 2x4 top and bottom, attaching the top 2x4 to the roof overhang just behind the roof’s fascia. Corners of the bottom 2x4 can rest on blocks or bricks to hold it above ground, with plantings arranged at the base for concealment. Keep the screens narrow and use them against only one half of the end wall for best effect.
