To Broil Grapefruit: Sprinkle each half with 1 tablespoon sugar and a dash of cinnamon, mace or nutmeg, if desired; dot with 1 teaspoon butter. Place grapefruit on broiler rack 3 inches from heat. Broil slowly 15 to 20 minutes or until grapefruit is slightly brown and heated through. Grapefruit may also be baked in a modeately hot oven (400°F.) 15 to 20 minutes. Serve hot. ' Food Processing in a Nut Shell Man has no corner on processing food. Look at the squirrels and look at the birds. They always have shelled nuts and hulled seeds to find food to their liking and which they could digest. Few foods, as they are grown by nature, appeal to man. Eggs must be shelled, the shell discard ed, although its calcium could ba used to build teeth and bones. Grains as harvested, must be ground and cooked. The -rough coat of bran which protects the wheat kernel, is not to man’s taste' and the germ causes flour to be come rancid, so they are removed in milling. This is despite the fact that nature stocked these parts with many necessary vitamins. It is not as wasteful as it might seem, for this processing of wheat makes available the endosperm—that tremendous part of the wheat which is a veritable mine of pro tein, energy, minerals and vita mins in a form which can be used in an endless array of good foods. The miller and the baker take care of the loss of B vitamins— thiamine, niacin and riboflavin— and the important mineral iron by returning them to the flour or bread. This is known as the en richment program. In a recent re port, “Role of Wheat and Wheat Products in Human Nutrition” from the Harvard Medical School, Drs. D. M. llegsted, Martha F. Trulson and Fredrick J. Stare, indicate that in some respects the use of enriched flour products may contribute more to the nutrition of man than that of whole wheat products. The report points out that by removing the bran and the germ, a sub stance known as phytic acid is eliminated from the diet. This substance holds calcium and iron so tightly that these minerals are not absorbed by the digestive system of man. Furthermore, by removing the bran, the indigestible cellulose is removed. It is because of its bulk that cellulose — bran — interferes with the absorption of part of the food we eat. Although the processing of wheat, thru refining, may cause a loss of its total nutrient content, in reality, this processing increases its nutritive value. It makes its nutrients more available aa well as those of other foods eaten. Living Costs Drop Slightly In September Washington — The government reported today that the nation’s living costs declined three-tenths of one per cent in September to the lowest level since last April. The Labor Department’s Bu reau of Labor Statistics said its consumer price index dipped to 114.7 per cent of the 1947-49 av erage. The decline was attribut ed largely to lower prices for most foods, primarily fresh fruits and vegetables, coffee and eggs. The September, index compar es with last April’s 114.6, May’s 115.0, June’s 115.1, July’s 115.2, and August’s 115.0. * The September living cost measurement is four-tenths of one per cent lower than a year ago, and six-tneths of 1 per cent below the October, 1953, record of 115.4. In announcing the new fig ures, Mrs. Aryness Joy Wickens, acting labor statistics commis sioner, declined to predict .what living costs will show for October when those month and in sub sequent months this fall.
