Boiled vegetables in salt water to barely cover until soft. Rub through coarse strainer. Heat fat in a frying pan or Dutch oven. Put in the meat and brown on all sides. If the frying pan is used trans fer the meat, after it is brown, to a kettle, unless the pan is deep enough to hold the beef. Pour the vegeta bles and their liquid over the meat, together with any preferred season ing. Cover tightly and let simmer slowly for four or r:ve hours, turn ing twice. Thicken the gravy a lit tle and pour over the meat. TUESDAY Veal Cutlets and Soup- Three pounds veal shank. Cook in boiling water until tender. Remove as much meat as possible from the bone. Cut the pieces to resemble chops. Season well. Roll in crumbs, egg and crumbs again and saute in butter or butter substitute. Garnish with parsley. For the ^oup take the remaining port'on of the shank and put it into a kettle with three cups of brown stock and a few pfepper corns, salt, celery salt and any other seasoning desired. Add half cup each of diced potatoes, turnips and parsley. Cook for one-half hour. (This' veal shank provides a soup and cutlets for a family of five). WEDNESDAY Chopped Beef an ( asserole. 1 1-2 pounds clod of beef, ground. Tobasco saute, 1-2 cup tomato relish, 1 can beets. Mix chopped beef with tomato rel ish, add one-quarter teaspoon'tobasco sauce (more if desired). Season well with salt, put in a glass casserole and bake two hours, iba^ting fre^ quently with a high quality of table sauce. A few strips of bacon across the top of any meat loaf add h t 0 its ichness and improves flavor. Serve garnished with one can beets, quar tered. This will serve five peopel. THURSDAY Oxtail Soup. 1 cup oxtail cut into small pieces. 1 teaspoon white pepper, 1-2 cup onions, cut fiiTe, 1 tablespoon parsley or celery top, 1-2 cup finely cut carrots', 1 tablespoon carmef, 1 cup diced potatoes. 1 tablespoon salt. 1-4 cup barley. The oztail should he chopped at each joint, making the pieces from 1 to 2 inches long; w r ash well in tw„ or three waters, put on to boil with two quarts of cold water; add the barley and boil slowly for two hours; then add the onion, carrot, .salt and pep per; boil for thirty minutes, add the potatoes and boil for twenty-five min utes; add a litlle paprika, thyme, and the camel. Serve all with pieces of oxtail. (This makes a very nutritious soup. FRIDAY BEEF BRISKET—'BOILED AND BROWNED If- the piece has much bone, part may he removed for soup stock or for gravy to be used wltjr the meat when wormed over. Cook the solid part o fthe meat until tender, with a little celery salt and garlic, turning it once during the cooking, which will take place from four *to six hours, accord ing to the amount of meat. Remove meat from liquor; place in shallow pan with skin side up, and score sev era Rimes across top. Have potatoes (hot or cold) In readiness to drop into kettle to take up some of the fat; then place them around meat and brown all in a hot oven for about twenty minutes. Make gravy with the remaining liquor, and serve sep arately. The meat will slice as firm ly as chees and will be tender and appetizing. SATURDAY ESCALLOPED CORN BEEF. 2 cups cooked corn beef, cubed, 1 cup medium white sauce, 1 stalk celery, chopped fine, , 2 slices onion, chopped. Cook celery and onion in sauce. Put the corned bee fin a shallow bak ing dish; remove celery and onions from sauce. Add sauce to meat. Sprinkle with bread crumbs moisten ed with melted butter or butter sub stitute; brown in hot oven. Deluge Legislature With Telegrams Jackson.
